Hi, I'm Dr. Cathy, and today I'd like to show you an easy way to make sun-dried tomatoes in your oven. Start with any tomatoes you like and be sure to cut them up so that they can dry out in the oven. Put them in a glass bowl, add some olive oil, a little bit of salt, and a touch of balsamic vinegar. You can also add pepper and garlic powder if you prefer. Put them in the oven at 250 degrees for about an hour to an hour and a half, just depending on the desired consistency and texture that you prefer. Or, if you like, toss them in when you're cooking something anyway, at whatever temperature. Just be sure to check on them, stir them up a few times, and pull them out when they're done. You'll decide that based on how well done you like your tomatoes to be. During the summertime, if you've got a tomato garden and lots of extra tomatoes growing, you can make big batches of these, let them cool down, put them in a Tupperware, and freeze them. Great for pulling out to throw into any recipe throughout the rest of the year. Hope you like it.
