The Freezer Store (Why 800 Calories Never Worked)

Dr. Ashley Lucas explains why calorie counting fails: insulin acts as a padlock on fat storage, keeping your body from burning its own fat. Lower insulin through protein-first meals, cut sugar and refined carbs, add dietary fats, and your metabolism shifts from glucose-dependent to fat-burning, bringing steadier energy and easier weight loss.

If you have spent years counting calories and watching the scale not move, I want to tell you something today that changes the entire game. What if the math, the calories in and out, was never the point? You have done everything they told you. You've eaten 800 calories, 1,200 calories, whatever the number was, you hit it and your body did nothing. Or maybe it dropped a pound or two and then quietly gained it back the next week. For reasons that made no sense. I want you to know you are not crazy. You did not do it wrong. The problem is that your body was never a bank account. I want you to think of your body instead. I want you to use this analogy like a locked freezer store. And every diet you have ever done was trying to withdraw fat from a store that you did not have the key to. Today I'm going to teach you what actually determines whether your body burns fat or stores it. I'm going to walk you through the freezer store metaphor that our clients at PhD Weight Loss tells me changes everything, and I'm gonna give you the daily signals that keep that freezer door open once you have the key. I'm Dr. Ashley Lucas. I hold a PhD in sports nutrition and chronic disease. I'm a registered dietitian, the owner and founder of PhD Weight Loss, where we have to date helped over 13,000 people collectively dropped more than 480,000 pounds nationwide. So let's dive in. You have probably been told your entire adult life that weight loss is just calories in, calories out. You need to eat less and move more. Even with these really common GLP-1 medications, they just make you eat less. And you have done that math faithfully, and your body probably cooperated for a time, but not in a sustainable for life type of way. Now, here is the truth. Your body is not a calculator. It is a hormonal system. What tells your fat cells to store energy or release energy is not the calorie count on the darn label. It is a hormone. It's actually a bunch of hormones, but one main hormone, which is called insulin. Insulin is the storage switch. When it is elevated, when you got chronically elevated insulin levels, your body is being told to store fat. When you got low insulin levels, your body is allowed to burn fat. Every meal you eat, every snack, every drink, that you eat is a signal. It is either telling your body store this or burn this. And most of what is marketed to you as healthy food, like whole grain bread, low-fat yogurt, granola bars, whole grain pasta, fruit juice— all of it is quietly telling your body to store fat all day long.
What if the reason weight loss feels so hard is because something's missing. I'm Dr. Ashley Lucas, founder of PhD Weight Loss, and after years in the clinic, I saw the same pattern.

This is why the 800 calories didn't work sustainably. It was not the amount, it's the message. Once you change the signals, the whole system flips. Your body stops being a fat storage machine and it becomes a fat-burning machine. So let me paint this picture for you. I want to make sure that you understand. Before you started paying attention to how you eat, your body was running one metabolism. It was running as a sugar burner. Let's say everything you ate got turned into glucose, insulin spiked, and any fat you had on your body got locked away in what I want you to picture as a freezer store with a padlock on the door. That padlock, I want you to imagine, is elevated insulin. As long as your insulin is up chronically, the padlock stays on. And here's where every diet you've likely tried has failed you. When you cut calories, when you ate 800 calories a day, your body couldn't get to the freezer store because the padlock was still there. So it had no fat to burn. And it did the only thing a smart body can do. It slowed your metabolism, it ate through muscle mass, it raised your stress hormones, and it sent you hunger and cravings so intense that you couldn't sit still after a period of time. Guys, this is not a willpower problem. That is, with this metaphor, a locked freezer. Your body was doing what a smart body should do when it thinks it's in famine with no way to access its own reserves. It was protecting you. Now, once you shift the way that you eat, once we drop the sugar and the liquid carbs, once we get protein and healthy fat at every meal, once insulin comes down and stays down, that padlock can come off. The freezer store opens. And now if you eat 800 calories in a day, your body says, "Oh, we're a little short today." We wouldn't like this for the long term, but we can handle it. And let me grab some from the store. And it burns your own fat for the difference. This is what I call metabolic flexibility. This is fat adaptation, right? We're not putting you on a diet. We're handing you the key to the padlock. If this is speaking to you, if you are realizing the reason nothing has worked isn't because you failed, but because you never had the key, That is the exact work that we do at PhD Weight Loss every single day. We customize a plan around your unique metabolism, your medical history, your medications, your real actual life, so your body finally has permission to open that freezer. Just go to myphdweightloss.com or click the link in the description, and one of our nutritionists will build the exact plan and path for you. So Here's another way to think about this metabolic shift that you're creating. Before this work, you were on an engine running on gasoline. Your body needed a steady, frequent supply of quick sugar or it would sputter and crash. And that quick sugar, we think, oh well, I don't eat processed foods or I don't eat a lot of sugar. You very likely do in some way or form. It is in there. That is why you are hungry every 2 hours. Why you have a 3 PM crash, why food noise is so loud all day long. Gasoline engines burn fast and they need constant refilling. You know this when you have to constantly refill your gas tank. Same thing with your body. Now, once you shift the way you eat, your body can become this diesel engine. Diesel burns slower, more efficiently, more evenly. You go way longer between meals without falling apart. Your energy is much more stable and steadier. Your focus is sharper. Your sleep is deeper. Your inflammation comes down and it does it fast. It is amazing how quickly your body can do this. Now, you're not just dropping weight when you work in this way. You are actually switching your operating system in the way that the body was naturally meant to operate. Okay, so let's say you have this key. The freezer is open, the metabolism is flipping over to diesel. How do you keep that door open? Every meal, you guys, is a signal. Your job is to send signals that keep insulin low and your body in fat-burning mode. So signal 1, protein first. Every meal starts with protein, high-quality protein that comes from animal protein sources. Are ideal. Eggs, beef, poultry, fish, high-quality dairy if your body tolerates it. Protein triggers your body's own natural GLP-1, keeps you full, and it does not spike insulin. Signal 2: Subtract the sugar in all of its varied forms, including the liquid carbs. Not just the obvious ones, but the sneaky ones. Bread, marinara sauce that has sugar in it, dressings, crackers, pasta, granola bars, fruit juice, flavored yogurt, sweetened coffee drinks. These are the daily insulin spikes that quietly lock the freezer door back up. Signal 3: Stop fearing fat. We want real whole food dietary fat. I'm talking butter, olive oil, avocado oil, tallow, heavy cream. Fat, you guys, is the slow burning fuel that your body actually wants and needs to let go of the fat on your body. Now, not punishing cardio— a 30-minute brisk walk every day. Walking after a meal can reduce your blood sugar spike by about a third based on the research. It is the single most underrated tool in the whole toolkit. Okay, also lifting something heavy. You don't have to go to the gyms and lift really heavy weights. I don't want you getting injured, but some kind of overload to the muscles. And I have another episode where I talk all about exercise, what forms of exercise to focus on, what to do specifically. I'll make sure to link this in the description for you. Now, a small side story that I think is pretty funny. I was talking to a friend and she is a peptide expert, and she told me that she had made banana bread one night and she ate a slice at like 11 PM and she panicked because she was wearing this continuous glucose monitor and she watched her sugar spike like in real time. And she said, oh my gosh, I knew that I wouldn't be able to fall asleep with my blood sugar spiking like this. And so she got on a vibration plate. She did some air squats, and within 45 minutes her blood sugar was back to normal. She started feeling sleepy, fell asleep, and had a great sleep. Now, a lot of us don't have a vibration plate. If we eat something that's not ideal, want us to panic But I'm sharing this story with you so that you can have the tools. If you do go ahead and eat something that's off plan or, oh my gosh, you're feeling yourself, your blood sugar spiking, what do you do? You move your legs like air squats, push-ups. They do the exact same thing. So I want you to feel empowered and have the tools to be able to pull that blood sugar back down. So if something happens, you eat these foods, you're like, oh my gosh, what do I do? Move your body, specifically the bigger muscles on the body, like, uh, squats. So you can do things like these air squats and push-ups. They do the exact same thing. So move your muscles and the sugar is going to go down a bit quicker and it's going to go into the areas where it belongs, which is in the muscle cells. All right, two quick things that I want to make sure I tackle with you and I share with you that come up often when we're creating this shift in our metabolism. Number one is constipation, um, or it can be even, uh, move toward loose stools. Whenever you change your intake, it's going to shift your microbiome, and it takes a little bit of time for your gut bacteria, that microbiome, to keep up. So one of the most common questions that I get in the very first few weeks of creating a shift in the diet is, hey, everything's going great, but the bowels are not moving. So real quick, what you want to do is check hydration first. And this is not just water, you guys. You want to make sure it's water plus electrolytes. You want to make sure that you're taking in a decent amount of salt, magnesium, potassium, all of your electrolytes when you are creating this metabolic shift. This is so important that I actually created an electrolyte supplement for this purpose, for people who are in the process of dropping weight and keeping it off. If you feel like you are struggling with bowel regularity and you're not getting adequate electrolytes, you should definitely check it out. Go to DrAshleyLucas.com. You can also just head into the description, click the link, and make sure you use code ASHLEY10 for a special discount. All right. Second, and this is the one most people miss when it comes to bowel irregularity, is not enough dietary fat. Now I know you have been told fat is bad your whole life, but dietary fat is what I call the slip and slide. It is the soap on the slip and slide that keeps everything moving. So if you drop your dietary fat intake too low, the slip and slide will dry up, and you want to make sure you bring that back. So do not fear dietary fat. Add some fat in your diet, add some more electrolytes, and you will find things keep moving in the way that they should. Now, the second thing that might come up after you have created this metabolic shift is maybe somehow you've knocked yourself out of fat burn, intentionally, unintentionally, whatever it might be. But you might experience some cravings coming back after a stretch of feeling good. 99% of the time when the food is on point and the cravings return, it is one of two things. Stress, or sleep. Elevated cortisol tells your body to hold on to belly fat and go looking for quick fuel, which is sugar. I want you to make sure you look at stress and sleep first. Fix those, and then the cravings usually go with them again if the food is right on track. Now here is what I want you to take away from all of this: your body was never broken, your metabolism was never broken, and The math never worked because the body was never a simple calculator. You were operating on a system that was locked, and every diet was trying to force the door open from the outside. Now you have the key. You know what insulin does. You know why fat and protein calm the storm. You know that walking after a meal moves the blood sugar. You know that the freezer store is open, and your job is just to keep the signals right so the door stays open. Your body is not waiting to betray you. Your body is waiting for you to feed it in a way that lets it do what it always wanted to do. It always wanted to burn its own fat, feel steady, sleep well, show up sharp. You did not need more willpower, and you still don't. You just need a different key, and now you have it. Now, if this episode gave you clarity you haven't gotten anywhere else, subscribe wherever you are listening so you do not miss the next one. And if you want to see exactly what a full day of eating looks like to keep the freezer door open, I'll walk you through breakfast, lunch, snack, dinner, meal by meal.
