If you always overeat at night, it's not because of your discipline or willpower. It's because of how your hunger hormones work. If you barely give your body any nutrients during the day, it's going to demand those nutrients later on at night. And when do you feel the most exhausted and have the least amount of willpower? At night after a long day. So you're setting yourself up for failure by not eating enough food during the day. So here is a simple rule to fix it. By 2 PM, you should hit half of your protein goal, and half of your calorie goal for the day. This will stop you from heading into the evening with cravings and snacking all night and stick to your calorie deficit better.
