Chicken Pot Pie | Cooking with Holly

A short, informal YouTube cooking tutorial by Holly Furtick (with guest Colleen) demonstrating a gluten-free/keto-style chicken pot pie. Holly shows how to make an almond-flour-and-ghee crust (egg included), pre-bakes it, then prepares a filling using shredded rotisserie chicken, ghee, garlic, chicken broth, cream, and canned vegetables, assembles the pie with a top crust, and bakes until done. Key specifics mentioned: preheat oven to 375°F; crust pre-bake about 8 minutes; final bake about 25 minutes; crust ingredients include ~2 tbsp ghee, 2 cups almond flour, and 1 egg; filling uses two rotisserie chickens and 1/2–1 cup cream.

That was good advice.
You should invest in some cooking spray. This is the fun part. Hi, Colleen.
Hi, Holly.
How are you?
I'm great. I'm ready to learn some things.
Do you like my T shirt? I'm fine. Everything's fine.
I feel like that's my motto in life.
We are going to make chicken pot pie. Now, this is a. You could call it keto. You could call it paleo. You could call it gluten free. Because it is a crust that is made with almond flour and ghee.
I've never seen this before in my life, so.
Okay, you're gonna need a bowl.
I'll wait to see what you show me. That. Does it need to have measurements on it?
No, no, no, no, no.
Anything like this? Yeah, I got that.
We have to preheat our oven to 375. Great. In the crust, we're gonna do two tablespoons of ghee.
I'm nervous to not measure perfectly one egg.
Sometimes I double this crust, so if there's not enough, we may have to come back and make more. But it's super easy, so it's not a big deal. Then we're gonna do a little bit of salt. And then this recipe calls for sage, but I don't like the sage, so not putting that in. Great. And then we're gonna do two cups of alm. Gotta go a little faster.
I know. I'm going, Holly.
All right, now you're gonna stir it with a fork, right?
Definitely what I was doing.
So you want to just, like, keep mashing it together with the fork.
Okay.
Until you kind of start to get this little dough. Then you take. Tell me when you're ready. Do you have a dough looks kind of like this.
It's getting there. I'm slower than you. Oh, yeah. Mine doesn't look like that yet. Mine looks like this.
Okay. Keep going. And, like, mash it with the fork. If it's too dry, you can add a little bit more ghee. But you should get a ball like this.
I'm getting there. I'm losing half of.
Use your hands. Now ditch the fork and use your hands.
Does yours feel grainy?
Okay.
I think the hands was helpful. That was good advice.
So take about half of the ball. Maybe not quite half. A little less than half. Pinch it off. Little more than that.
Okay.
And put that in your bowl. And now you're gonna get your casserole dish.
I have this. This good.
That Perfect. Great. You should invest in some cooking spray.
That's probably a good idea. Could I have used the ghee. Yeah, well, sure. Too late now.
Great. You ready? Leave the butter on your hands. It's. And now you're gonna just press this dough down into the. Into the dish. Okay. Depending on how big your your dish is.
So here, this is what?
Yeah, that looks great. Okay, we're gonna put these in the oven. Eight minutes. We're gonna chop our chicken. Now this is rotisserie chicken. We did two rotisserie chickens. Do you ever buy rotisseries? Sometimes anything I' put chicken in, I cheat and use rotisserie. So chicken salad, chicken soup, chicken pot pie, taco, chicken salad, however you want to flavor it. I always start with rotisserie chicken and chop it up. Do you have a knife like this?
Nope.
Okay, well, what. What do you have in your hands? Forks. Well, we're going to chop the chicken, so that's not gonna work. All right. Are you happy? I'm happy. All right, now we're gonna move over to the stove, and we're gon filling. Great. So we're gonna start out with again, my favorite ingredient, ghee and garlic. So just get a big scoop. Put it in. Get it in there. Now you're gonna take your knife and you're gonna just chop up the garlic. We're gonna let this garlic melt in with the. With the ghee.
It smells amazing.
Pour your chicken in with that and sort of stir that around together. We're gonna give it a couple shakes of onion powder. Then let's put some chicken broth in there. Cause it's getting kind of sticky. Let's put a little bit of cream in there. Half a cup to one cup. All right, let's add our vegetables. Now, you obviously could have started with fresh vegetables if you wanted, and you would have just sauteed them with the butter and the garlic. But for time's sake, and because you don't cook that off in any way, we're gonna use canned vegetables. So let's start with the lima beans. You wanna pour em into a colander? Fun fact about my colander. Got this at the dollar store when I got married 18 years ago. Sometimes I just do, like, not quite a whole can. You know, I just try to sneak some in. You can do green beans, you can do black eyed pe. Dump your carrots in, though. Open. What are you doing?
I just have lima beans. I haven't done anything yet.
Pour your beans in the colander in your sink. Yeah, there you go. Then open your can of carrots and get a butter knife. And you might Just want to chop up the carrots in the can, and then just put about half of that can or as much as you want in on. Just pour it on top of your lima beans. All right. Give it a little shake. You can give it a little rinse. We're going to put this in with our chicken mixture, which should be nice and boiling by now. All right? So yours should be thickening up and boiling and ready to go.
You ready? I'm ready.
So you're gonna pour it into your pan on top of the crust, half and half in yours. Got it. Be careful. It's hot.
It is hot.
And then just spread it out. This is the fun part. Okay, now we're going to put the rest of our dough, we're going to roll it out, and we're going to put the top on. Do you have any cookie cutters?
I found I have one cookie cutter from a dog treat thing someone gave me, and that is it.
I got some hearts.
Got it.
Okay, now you're gonna take them and put them back in the oven. So we're just gonna let this cook for about 25 minutes. How's yours look?
Can you see that? Oh, no.
Awesome.
Yours looks amazing. The hearts were the way to go.
It's gonna be really hot.
Holly, that's amazing. You like it? I love it. I'm just gonna maybe eat lunch out of this. Yeah.
