Fried Chicken | Cooking with Holly

YouTube cooking video by Holly Furtick (Cooking with Holly) demonstrating how to make fried chicken tenders in a cast-iron skillet, alongside roasted sweet potatoes and collard greens. The video shows an optional buttermilk soak, dredging in pre-seasoned flour or almond flour (noting almond flour worked well for gluten-free), frying in peanut oil with the skillet filled about one-third, and roasting sweet potatoes at 425°F. Holly reflects that frying is messy, she overcooked some pieces by waiting for color, and recommends salting after frying.

Well, we're here in the Ferdy kitchen. I'm here with my sous chef, Graham, who has begged me to make what? Fried chicken. I haven't made fried chicken in, I don't know, probably a good 10 years. I mean, I. I fry chicken in my air fryer, but Graham wants us to fry chicken in the cast iron skillet dipped in all the good, yummy things. And so we're going to give it a go and we're going to film it. Before any of you say anything in the comments, we are making fried chicken tenders, not bone in breasts, drumsticks, thighs, all of that. And I know some of you are going to think that we're not actually frying chicken and all that good stuff. I don't really like, like, chicken on the bone. I don't really like fried chicken on the bone. Graham was okay with that. Right, Graham? Okay, the first thing we're gonna do is we are going to do an optional step. Some people like their chicken soaked in buttermilk first. So we've got our pans and got our buttermilk. Did you wash your hands, sir? Yeah. Chunky. Yeah. First, you should have shaken that up. And second, we probably should put our chicken in first. Now pour it in. How much? Let's put the chicken in. Okay, that's good. You don't have to pour it. All right, now use your hands and like, kind of like get it around. Bare hands. Bare hands. Boy, you just got your hair in the buttermilk. Just take your hands and just go like that and mix it around. I hate this. Great. This is like, this is like a 30 second job that you're making. Five minutes. All right, Perfect. All right, we're gonna put this lid on. I'm gonna check back with you in a couple hours. When we go to make the chicken, we're also gonna make. Here's our ingredients. We've got peanut oil, we've got some sweet potatoes we're gonna slice up, and some collard greens that we're gonna make. See you in a little bit. This is a real kitchen, guys. So in order for our house not to smell like fried chicken, we're gonna have to have some noise. Hope you can hear. First thing, we're going to put some paper towels down. All right, so we're gonna take a piece of chicken, we're gon put it back in the oil heated up. No judgment, guys. Frying chicken, it's fried chicken. Fill up your skillet to about one third full. This we're gonna do the other way. According to my notes, we're gonna make a mixture. Oh, we're gonna salt, pepper, garlic salt, garlic powder, and chicken. But I did something smart. It's pre seasoned flour. I'm thinking this is not gonn. We shall see. Damn. Pour it in here. Uh oh, I burned the greens. You think they're gonna taste good? What are you doing? Everything's okay. All right, here we go. Got collard greens. I didn't have any bacon. I think my phone is upside down. Hold on. There we go. Then we've got sweet potatoes in the oven. We just put salt and pepper, olive oil, and we're roasting them at 425. We'll see how those taste. Let's get this going. So, Graham, you want to do the first game? Yeah. Let me show you how. I will drop this into the water. Just gonna take it and you're just gonna go watch. I'm watching. And then you drop. All right, now we're gonna cover it. All right, we're checking. Put it on top of that. Looks done. Hold on. Let's cut it all the way through. It's done. So we're going to drop it in the bag. Let's do a batch of the almond flour ones next. All right, we need another paper bag for almond flour chicken. All right. Gotta guess. Hello. Flipping our chicken. Graham's concerned that they don't look very brown. Is it brown or like, ready? All right, we're gonna give them a few more minutes. This is our progress. Get them out. Get you. All right, let's do come. All right, so I just wanted to take a minute and reflect on that whole fried chicken thing. So here are a couple thoughts. First of all, I have not fried chicken in over 10 years, maybe never. I don't really remember, but I had forgotten about how much of a mess it makes. So if you're gonna fry chicken, make sure that you are ready to clean up. Get ready for grease everywhere in a big mess. Second of all, I cook the chicken way too long. So if you're going to cook your chicken, depending on how thin your chicken is. But I think that I waited until it got the color that I wanted and by the time it was that brown, it was overdone. So either cook thicker chicken or pull it out before it's the exact color that you want. I used pre seasoned flour. I don't think that I needed to because actually the almond flour ones that I made were delicious. And I had seasoned those with just onion powder, garlic powder, salt, and pepper and they turned out great. So also, if you're gluten free and you want to fry chicken with almond flour, it was awesome. Okay, what else? I forgot to salt at the end, so that might have been why the seasoned flour wasn't as good, because I probably have put more salt in my own than what was actually in the flour. So make sure you salt afterwards. So I hope that if you like this video that you will share it with someone. If you made the fried chicken, leave me a comment below and let me know how yours turned out. And make sure that you subscribe to my channel so that you can know when I post more videos just like this one and I'll see you back here next time.
