How I de bone a Chicken (without hitting bone)

Victor Justin Rhodes shows how to debone a chicken cleanly without hitting bone. He and a partner prepare a chicken casserole for friends with a newborn while juggling farm chores like milking cows and building a frame.

Nutrient-dense snacks this morning.
Whoa!
Steak, grass-fed hot dog, and attached to an arm. Milk. On today's episode of Burn It Up Cooking Show, chicken casserole. Hopefully with the beautiful one. All right, so we're, uh, actually making a dinner for our friends who just had a baby, and we're gonna double up on it so that our family can have it too. So at least I can show you how to part a chicken. Between the legs. Pull this out till you see that bone. You can even pull it backwards like that. Then you cut along, you cut that thigh off. For cutting the leg off, there's a strip of fat. You can see it right there, pretty obvious. That's, that's between the joint. You cut right through, not even hit a bone. Take a break from that for a second. Boy, did it rain. It rained hard. I don't know if the, the groundskeepers— is that what you call it?— will be here. The graders will be here today. I don't know. And I don't know if Randolph will be here today. Be kind of good because we, we don't— we're not going to be here today. The only thing we lack from covering this garden up is these 1, 2, 3, 4, 5.
Oh, that one's ready, that one's ready, that one's ready, and that one's ready.
Really? Look, and this one's—
tendrils are dead. Yeah, those tendrils are dead.
Yep. And then those are dead, and then those are dead, and then this one's so not dead.
This one's so not dead, and that one is so not dead over there.
We won't worry about that little one. Go ahead and cut them, buddy, and put them in the cool room. These peppers are gonna stop us. Seems like they're Yeah, they're now starting to turn. And the tomatoes, maybe we'll get one more harvest. These crops are jamming. We're gonna have to weed this now. And I'm looking over here though, you know what, and this is bad. Our, our bug net's not working. I don't know if we trapped them. Look, destroyed. Back to the To the meat, we just cut this off the bone. I just cut on either side of the bone, and I took the skin off for this dish. Now I'm going to cut it into bite-sized chunks. Pull the wing against itself, or away from itself, and cut until I can see the joint, and then cut right in between it. You'll dull your knife if you hit that bone. And I like to find the keel bone right here, which is that bone right in the middle. And just cut alongside it, get that breast off. I want you guys to see this. Look at that breast. That's one breast.
It's one inch thick.
Of the chicken breast. Now you gotta do something with the With the dark— the legs and wings. I want to be out there. Jonah's out there setting up the net since we'll be gone this afternoon. Get in and just hire someone out there about to move the ducks. There they are, they're crossing over now. They're cute together. Looks like I'm gonna have to be clearing the set for the beautiful one. Okay, that's much better. Nothing encourages kitchen creativity more than a clean kitchen. You feeling all right? Yeah. Okay.
I think my thyroid medicine is off.
Yeah.
So I texted, or I messaged my doctor. I'm a little freaked out because I don't, I've never, this medicine I've never had these issues with. And now I am and I'm a little bit freaked out.
Heart racing, not able to sleep.
Dizziness, headache.
High blood pressure.
No, I didn't have high blood pressure.
High heartbeat.
It was high heart— yeah.
High heartbeat.
My heart is racing when I'm laying down.
Yeah.
It's not sleeping. That's what stinks the most.
Yeah.
Cuz like, I sleep for like 20 minutes and then I wake up and then I get hot and then—
Yeah.
Just, yeah. So, I don't know. We're gonna— I just, I'm gonna— I just told her everything and I said, what are we gonna do?
Are you gonna be able to make this meal?
Yeah, I'm gonna get up. I just was, um, all right.
I need to do this Luchador Minerals. This is like weeks overdue.
Oh my gosh, this still hasn't got done.
I just got to do it. I don't really have the time. Okay, somehow I need to edit, so after that and after milking, I'll edit. Do you want it? We'll go as soon as after that.
You want me to try to edit?
I mean, you could do the first round, but get it in there and cut.
That's what I'm saying, it shouldn't be Oh, this is surprising.
The graders are here. I did not expect that. Maybe they were just checking it out. Hey, they're out there looking at it, shaking their heads. All right, I got 20 minutes till milking time. I really don't have time to do this, but I've put this off way too many times. Yeah, I came down here and talked to the graders. They were checking it out. They said it's, it's way too muddy. Good call. Hopefully it's gonna be dry today and they can come back tomorrow. This mineral feeder is working great for keeping it dry, but they knock these things off. They rub up on it. But I'm realizing, if I put a frame here, are they still going to be able to reach under there with their nose? I definitely couldn't put a frame that close, and I wouldn't be able to see my, my reading. So if I put a frame maybe here at the bottom and did a 2-inch split, ripped the board in half, it'd be about right there. That might work, guys. See what this is. 70. Let's go build a frame for it. Come on, boys. Josiah, Gideon, come on, let's make these cuts. It's good we have a stash of lumber now. Yeah, let me get it started. Okay, Gideon, and then you can do it. Hold on, let me get it started. There. Yeah, okay, that's enough. It's enough. All right, let me finish that. All right, you can help with the next one. Okay, okay, go ahead.
Which way? Pull trigger.
It's like— good. All right, we got our stuff. It's a little after, but we're gonna do it. We're gonna do it. Hey, why do we need all these posts?
Because they're all lightsabers.
Oh boy.
Okay, open it.
Open that door for Teddy. See if he'll get in. Come on. Hey, if you guys didn't have so many lightsabers—
we only have two. Nope.
Measure it and cut it right. A huge weight off my shoulder. Now we'll see if that works. That gives them plenty of room to still lift this flap up and hopefully not enough so they don't— if they rub up on this, they'll hit this board. And you can still see the, the labels, so hopefully that'll work. I feel much better. It's almost September. You know what that means?
What?
We've had these guys over a year now, and we're gonna breed them in about a month. We're gonna put them with everybody else. Exciting. Felt like this day would never come. We're trying to get the cows in, but Phyllis is coming into heat, I see, and it's hard to keep Stud Muffin from coming. Come on, come on, come on, you got this! We should go over it. Come on, you go over it. I guess so. All right, nice. Fence charged up. You stay there, man. That's a good cow. Gives birth, comes into heat 3 weeks later. Hey, before we milk, I should go check the chicken. Little Polly, you doing good this morning, little Polly? You need a little alfalfa snack there? How you doing, Miss Thing? Second cow, Lily's gonna milk it. I'm gonna take up Flossie's. I've washed that for her. I'll take Flossie's, get in the ice, and then come right back. It was a huge game changer, Lily being able to milk with me, because essentially it just doesn't stop. Before, we'd have to take a break, go deal with this. Even the kids can change out the ice packs now and put the milk up. I have to process it. Did you switch out the ice packs? Why not? Are they still frozen?
I'll go check.
And then did you get the milks out of the cooler?
Mm-hmm.
Okay. Oh, beauty! I'm just in time to see some action. You're gonna heat up the— I'm gonna cook the chicken.
You have to cook the chicken and you have to— so I basically just want a really easy meal for them.
Uh-huh.
Um, so all you have to do is just stick it in the oven.
Okay.
And they'll make rice, but I'll supply all the stuff.
All right, Josiah's making the milk. Jonah's actually doing the first edit for me today. It's definitely a team effort today. Well, every day, but what other job is like this where everybody can be involved from the youngest to the oldest? Where are you going so fast? Oh no, that feels kind of naked out here, doesn't it? Another room. Pull up the sunflowers. Well, you guys are going to be happy today. Nice. Oh boy, that looks delicious. Cook broccoli too?
Yeah, so you, you, um, cook the broccoli. Oh, those onions.
You basically cook everything.
Yeah, mix it. Yeah, I mean, that's the best way to do it.
Just onion and garlic for it.
That's the way I've always done it.
You got some chicken broth?
Maybe people have other ways. Yeah, so I'm caramelizing the onions and then I'm gonna add the garlic and salt and then chicken broth. And this is like a mess.
You so happy to see me?
I am so happy to see you. And then I'll stick blend it all together, kind of like— and yeah. And then—
okay, how's it go? Because we— in case we missed it. Okay, that's how you know if you get it right.
Oh, it's so bad to hear.
Oh my word, it's a lot to be without me for 20 minutes.
It is so much to be without you.
So it's a sweet, sweet reunion.
Oh, it's so—
a lot of emotions.
So hard.
That's a sauce. So this is a stick blender. See, it's— oh yeah, that's how I know it's going to work.
I did a good impression though.
Yeah, you did. You got it. And that's your sauce?
Yeah, I'm gonna add cream to this.
Chicken broth, onions, garlic, cream. Oh my gosh, check the smoked chicken. What do you think?
I can't even—
oh yeah, 165. It looks done.
Are we eating that?
Yeah, that's done. Next up Look at that sauce though. Goodness. And is that it, or you put—
I'm gonna put half of it in mine too.
More cheese on it?
I'm gonna put cheese on top of it. So now we stir this all together.
Cheese in it and on top of it. This is smart. One for our friends and then one for us, for a little treat for Rebecca. She can only stomach things, and the only thing she could stomach this morning mashed potatoes into a patty, frying them. I hit it right, guys. It's taken me a while to do this, but look how brown that is. I let it— I let it cook long enough. I put enough butter in there so it didn't stick. That one could have used a little bit more time. It's hard to tell. That's a neat way to freshen up some leftover potatoes. Here you go, Rebecca. Very yellow, but potatoes for delight, eggs for medicine.
Oh, I don't know if I can do the eggs.
Do the eggs first and get over it.
I will, but I need water.
So why do women—
I think I'm gonna scroll Instagram while I eat the eggs. Like, I need to not be focused on the fact that I'm eating eggs. All right. No, they're not.
Look at this guy. That's a good appetite. For me.
That's so good. Why, why does pregnancy have to be so weird? Put that in your pregnancy vlog.
