I flew to Hokkaido to try noodles from a soba master. This is how it went. His name was Tatsuru san and he's been making soba noodles for over five decades. He runs a small 12 seat restaurant called Rakuichi Soba. It's so hard to get in that I had to make reservations six months in advance when they became available. I had nine dishes. Otoro tartare, pickled mackerel and peeled tomato saikon dish, Otoro sashimi seared bonito. We got an extra dish of steamed vegetables since we had a vegetarian shabu shabu, vegetable tempura bunk with noodles and yuzu sorbet. Everything was amazing and a must visit, save and follow for more.
