But then you had this thing in your mind that whatever your parents had the business, you wanted to, you know, probably want to start the same. And you change the name to Gracious Indian.
From 2007 to 2009, their son George and his parents worked closely together on a concept for a new kind of restaurant. Drawing on Roy and Mercy's wealth of knowledge and recipes, they developed a small, sustainable menu for Gracious Indian.. It hit on traditional dishes that everyone loved, but every recipe was designed to be made fast, fresh, and to order.
I'm using all the ingredients from scratch. Actually, onions, garlic, ginger, all from the fresh one we were using because that's what we were using in the house. So the same way I started making the recipes, adding different spices together and made new recipes.
They spent years perfecting their recipes to ensure that Mercy's passion passion for delicious, healthy, traditional food can be tasted in every bite.
