A fruit salad framework separates base ingredients from dressing. This version layers arugula, donut peaches, avocado, burrata, and toasted pecans with a balsamic-lemon dressing, finished by slicing the burrata to let it flow across the plate.

What happens when you mix juicy peaches with creamy burrata, buttery avocado, and crunchy toasted pecans? You get a fruit salad that balances bright, juicy sweetness with creamy, savory depth. Here's how we made it using Cook Improv's fruit salad framework. The fruit salad framework breaks down into two main parts: your salad base and your dressing. For your salad base, you can mix and match tree or stone fruits, berries and melon, tropical and citrus, other fruits, cheeses, veggies and onion, and meat. For your dressing: acid, fresh herbs, oil, sweets, nuts, seasonings, and yogurt. For the Peach Avocado Pecan Fruit Salad, you can see Tucker Herbert using delicious ripe donut peaches, toasted and ground pecans to add that nutty and crunchy texture to the salad, fresh basil, and avocado. And for the dressing, we are using balsamic vinegar, lemon juice, olive oil, some salt, honey, and mixing it with chopped fresh basil. We then dress arugula salad with the dressing with our hands to really get all that dressing in there. Plating a fruit salad is a colorful, creative expression. The key is to not overthink it. Just improvise and go with the flow. We started with a bed of arugula, scattered on slices of peach, shallots, and avocado, then nestled a ball of burrata in the center, then finished with a sprinkle of crushed toasted pecans. And the grand finale, slicing the burrata and letting that creamy cheese spill over the top of the salad. Then we finally went in for a bite. As you can tell, we love this root salad variation. The flavors just come together beautifully: sweet peaches, creamy burrata, buttery avocado, and that nutty crunch in every bite. As we were enjoying every bite, we started thinking of adding some kind of protein, like cured meat. Fortunately, we had some chorizo in the fridge and tossed that in to try, and that was just as delicious too. What would be your fruit salad combo? Let us know in the comments. This is Cook Improv. Keep improvising.
