Aaron Hartman, MD, argues that decades of low-fat dietary advice backfired. Industrial processing of seed oils creates damaged fats that accumulate in your brain and cell membranes, disrupting metabolism and damaging tissue in ways the research increasingly documents.

Your brain is mostly made of fat, different kinds of fat. Your cell wall membranes of every cell in your body are mostly fat. They're made of saturated fat, phospholipids, myounsaturated. A bunch of stuff is in our cell wall membranes. Yet for decades we were told low fat diet. And when we did eat fat, it was partially plasticized fats. It was taking corn oil, right, and turning it into margarine. Crisco is another vegetable oil that's partially solidified. And then we took seed oils which are typically healthy, right? You know, sunflower, flax, and we expellopressed, heated them. We took canola oil, which is rapeseed oil, and did a deodorizing. We used hexane to extract the oil, then deodorizing it put this into our food system. Guess what it did? We removed healthy fats and replaced it with toxic fats. Now we're realizing in the literature that these toxic fats in nerve endings and vessels and arteries and cells is causing disruption in our body's metabol.
