These avocado truffles are super tasty and really easy and they're a great go to for me to take to a party or to make over the holidays. People are always surprised at how tasty they are and even my 18 year old son likes them. So, you know, they're good. And they have just a few ingredients. They're super simple to make. They're made with dark chocolate chips. I like at least 72% and I like the Trader Joe's brand. These. This bag may or may not have already been opened. An avocado, of course, it has really great healthy fats and it's anti inflammatory. So we know we tend to eat things over the holidays, maybe at that party or drink things that are not so great for us. It might cause a little bit inflammation, but some avocado can help with that. And it has a little bit of vanilla and a little bit of sea salt. So we're just going to take these chocolate chips and put about 6 ounces into a bowl and then I'm going to microwave them 30 second intervals until they are melted, stirring in between. So I melted my chocolate and that's ready to go. And now I've got my avocado and I'm going to just mash that in a bowl until it's totally smashed up. You know, we don't want to have any lumps in our truffles. Right. You don't want somebody biting it into a big green piece of truffle in their dessert. They'd be really surprised. So I've mashed my avocado and I'm going to add my half a teaspoon of vanilla extract and just a pinch of salt. And now I think these are plenty sweet for me. But if you like them sweeter, if the dark chocolate chips are not sweet enough for you, this is the point that you could add in some coconut sugar or some regular sugar or some honey and maple syrup. These are pretty forgiving. So another thing I really like about it is that once you've made them a couple times, you really don't even need a recipe. You can just make them and not think too hard about it. All right, so at this point we're going to add the avocado to the chocolate. I know this seems weird, but trust me, it's going to be amazing. All right, so we're going to add that in and we're going to mix it really well. Then we're gonna chill it for at least 20 minutes or so until it's Firm. Okay, I'm gonna get this mixed up and put it in the fridge. All right, so now we have our mixture that's firmed up in the fridge. Now, don't do what I do and leave it in too long. You really only want to leave it in for about 20 minutes, because it will get a little firm, a little harder to work with. But you. You can. Even if you forget about it, you can still go back in there. You just have to work with a little bit more to get it to firm, to get it to roll into a ball. And it might be a little more challenging to scoop it out. So I'm gonna do one here and show you. It can get a little crumbly, but again, just kind of press it together and roll it into a ball, and it looks really pretty, like a little chocolate truffle. And then you can roll it in some cocoa powder or cacao powder. I love this Trader Joe's. You can tell where I shop, but this is great cacao powder. It's organic, and you can just kind of roll it around in there to make a pretty little truffle. And you'll be surprised at how people will rave about these at a party. So I hope you enjoy your truffles and happy holidays. Now, I've rolled them all out, and I've rolled a few in the cocoa powder. You could also roll them in some shredded coconut. That would be delicious. Or I like some cacao nibs sometimes to roll a few in there. Or you could do crushed nuts, like crushed pistachios would be really nice and would add a nice color that would be kind of festive. And then if somebody bites into one and they see a little fleck of green from the avocado, they won't think anything of it. So that might be a good choice, too. So I'm just going to finish rolling these in the cocoa powder and plate them up. So I'm all done rolling them. And I rolled a few and left a few unrolled. I like kind of the variety of color, but these are fun to take to a gathering or party, and they're always a big hit around here. I love that they're really tasty and people enjoy them, and they're a great way to get all the benefits of the chocolate and the avocado with not a ton of sugar. So enjoy and happy holidays.
