97. Ben Faces His Biggest Fear After Losing a Bet.
21 Sept 2023 · 33 min
Episode 97 of the Bennebergs Podcast (hosts Ben Simpson and Bergs) centers on Ben’s New Zealand trip where, after losing a fundraising bet, he completes three extreme activities: the Nevis bungee (136 m), a 15,000 ft skydive, and a large canyon swing (handstand variation). The episode mixes vivid first-person adventure storytelling (panic, nausea, adrenaline rush, peak heart rate ~190 bpm) with lighter segments—meme of the week and meal of the week (Ferg Burger, plus Bergs' homemade pizzas and a pork belly banh mi). Conversation alternates between candid reflection, humor, and practical details about the activities.

Made me feel sick. I actually couldn't watch it. She was jumping off this bridge into the water. I checked my phone, it's 1am I slept for like 45 minutes. Couldn't get back to sleep. Horsing and turning sweaty. My sheets were wet. I was having panic attacks. I was just in an absolute state. And then we get out to the canyon and that's when I started to get physically nauseous. No way. That is scary. And then there was complete silence. Everyone at that point was panic stating. So I loaded up. Fucking David Goggins.
You gotta face your fears if you want to be anyone in life. Anybody in life. Callous your mind.
Don't be a I remember watching that video. You're shuffling up and your cheeks are pinched so tight clenched.
So I was holding a toothpick.
Welcome back to another episode of the Bennebergs Podcast. I'm Ben, your favorite high school dropout and founder of Collective Shift. Alongside me is Bergs, your favorite MBA and COO of Collective Shift, Australia's leading crypto portfolio insights company, providing professional analysis and portfolio strategies for crypto investors. Like you, we are a unique blend of the established and the self made. And we're here to break down crypto business and personal growth. But we're not here just to talk crap. We're giving you the insights you need to make better investments, build successful businesses and level up your life. And today we're talking about. I faced my biggest fears last week, something that I never thought I would ever do. And you asked me a year ago, I will told you to get the hell out of here. There's the door. And last week I faced them. I did bungee jumping of the biggest bungee jump in New Zealand, 136 meters. I skydived 15,000ft and I did the canyon swing which is one of the biggest in New Zealand and it was horrific and we're going to talk to what that was like. Plus we'll do meal the week and me with the week and do a little catch up from Bergs and I.
Mate, I'm looking forward to hearing this. So Ben told the story in our huddle on Monday and I took my headphones off and I saw everyone, they were just laughing. It looked like an awesome time and I want to hear it live for the first time on the pod. And Ben, you are not doing this just out of the kindness of your heart. You're saying, oh, a year ago we told you to bugger off. A year ago you actually needed to do this Mate, we had a bet. When you're in capital raising mode where you would raise a certain amount of money, and if you didn't reach that amount, Ben, you would have to bungee jump. And guess what? You didn't reach that amount. And okay, you've ducked me for an entire year, mate.
Audience, I just want to be clear.
The rules were gray. I, I, I crossed the achievement, I crossed the goal. The way I did. Way I perceived it, yes, I did. Okay, but under Burgs rules, he's deemed me to not have achieved the goal, which I disagree with, mind you.
Of course you do, because you don't want to bungee jump. So in the normal world, where we're not trying to rationalize not jumping, the goal was, Ben raise $100 and you raised like $90.
No, the goal was to raise $100. Ben raised like $105. But we had like $7 that was signed that we didn't end up getting payment for. So.
So you didn't raise the money under.
The letter of the law, under signed agreements. I, I passed that goal.
That money is not raised. It hasn't appeared in the company accounts. You are at 90.
They still could come through. They still.
Look, mate, you still did the bungee jump, so I'm proud of you, man.
I still did the. Didn't do it. Still did it.
Yeah, I mean, I mean, you failed the cap race, but it's okay, you know, you got, you got very close and you're like, oh, I'm so close, mate. Just let me go over the line, man. I'm like, nah, man, I'm gonna leave you off, you guys.
So it was actually leading up and Ben's PA was there and she booked him. He's gone to New Zealand. He's going on a, like a contigu thing. And she's actually booked him in for bungee jumping and skydiving. And she's telling us about it and we just think it's this huge stitch up. Ben's not going to do it. And he's like, nah, look, I'm not doing it. I'm definitely not doing it. And mate, I've seen the videos. You actually did it. And now I'm just dying to hear the story. Take it away, mate.
So the first night we had to sit down and mark, we got an activity sheet. We had to take the things we wanted to do. And I saw there was the left hand side which was like, you know, boat cruise, wine tour, helicopter up the valley, you know, like wine Picking all this sort of stuff, like that's my kind of thing. And then the right hand side was just all the crazy shit. The never bungee, the skydive, do you want 12,000ft, 15,000ft, the canyon swing, the shot over jet, all this sort of shit. And I'm like, my, my inner, my inner self is like, not, not a chance.
But then my mate who was with me, good mate of mine, it was his, it was his birthday and he's like, mate, we're doing this. And you know, it was at that point I was like, well, I said to the, I said to you guys before I left, I said, I'm going to do it. I didn't know if I was actually going to do it. Really didn't have a realization to take that, take that thing and went through that. And by mind you, I had a few beers at this point, so I was a little bit loose, you know, I hadn't really thought about ticked them. I was like, yeah, let's do it all.
Now. Sunday night, Wednesday was the day we did the bungee. Now I'd seen videos of a bungee from another girl that was on the, on the tour that had done it before. And it made me feel sick. I actually couldn't watch it. She was jumping off this bridge into the water. And when we're doing the activity ticking. There was two types of bungees. There was, there was the bridge and there was the Nevis. And one was 40 meters and one was 136 meters. So three times big. And I turned to this girl that I was talking to, I said, you did the Neviston? You did the 136? Because that was huge. He said, no, no, no, I did the 30. That was the.
No way. That is scary. This is three times as big. And then there was complete silence. Everyone at that point was Panic Station because no one had done it. And one guy youtubed this Nevis bungee and basically watched it. And you could see his jaw drop. And then he just threw his phone and walked off. And I was like, oh my God. So Tuesday night comes around at dinner, we've been snow morning, doing whatever, get to bed. And I'm nervous as hell. I am. It is Panic Station. So the whole day all I could think of was like, you go for like four or five minutes, you know, like, oh, you know, take it all in Queens it. And then your brain would just remind you, hey, Ben, guess what? You're jumping off a 136 meter canyon tomorrow. Just, just a Heads up and you feel like again. So I went to bed, like 11 o'. Clock, couldn't sleep. Finally fell asleep, woke up, thought it was morning, got up, was about to have a shower. Check my phone. It's 1am I slept for like 45 minutes.
Amazing.
Couldn't get back to sleep. Tossing and turning, sweaty. My sheets were wet. I was having panic attacks. I was just in an absolute state. Finally.
So it's just an average weekday, mate.
It's running startup. But all I could think about was this nightmare of like falling off at like off a cliff into like. And all I could think about was like, my God, have they done the security procedures? Will the ropes snap? You know, do they know they're doing well? The guys up there be hungover? Do they know what they're doing? Will they tie me up properly? What happens if something snaps? Like all these things just go through.
All of the above. They're definitely hungover and they do know what they're doing.
Right. They were hungover. So then, okay, we get up tired as we're on the way to the bus and it's, it's just, it's just, it's just a Nevis, right? So everybody's just pretty nervous. Empty on the bus, 40 minute trip. Everyone's just like, okay, right, we're actually doing this. Cool. We're all good.
So you're just packing it in, mate.
Like proper strength on me. I'm just like, okay. And I was like, I need someone to get me through this. So I load up David Goggins.
And I'm just smashing David Goggins on repeat. And he's like, you got to face your fears if you want to be anyone in life. Anybody in life. You got to face your fears, callous your mind, don't be a pussy. All this sort of shit. I'm like, right out there, let's do it. This. I'm pumped up, right, Stay hard, David Goggins. Go in, get harnessed up. Let's go. And then we get out to the canyon, out of the viewing. Get the. There's a viewing deck. You look over the canyon and that's when I started to get physically nauseous. I was like, no chance.
All the names. Ben Simpson. Yeah. You're in the first carriage, okay.
Rolled up into this little carriage, this little silver carriage. Roll in. It's like fibers. She shuts the door. She said, good luck. Good luck.
Amazing. Don't die.
It's this button and then all you use is.
Like this groaning sound. This, this like little carriage is like starts to make its way into the middle of the canyon. Where in the middle of the canyon there's this hut like hanging by like these wire ropes. And as you're coming out, you're coming over the edge of the cliff and you can see down 140 meters into rocks.
So it's like a little cable car thing that takes you out.
Cable car out to a little hut dangling over 140 meter canyon.
Oh, no way.
I'm like, no fucking way. Turn around. I'm out. This is just ridiculous. You go out there and you sit in there and it's just, it's just this weird energy because you're so scared about what's about to happen. Like this is my ultimate fear. You're harnessed up, you're sitting on the scenes giving the safety debriefing. And you're looking, they've got glass floors and you're just looking down going no. And you can. And at the front of this little hut is this little silver square where you jump off. And I'm like, oh my God. Just trying to hype myself up.
I saw the videos that that has took of you and just to stitch you up while you're standing on that platform, it's all glass.
And I was like, come on. Just to remind you what's like, don't look down but if you look down you're going to see everything. It's like. So then they, they strap you up, they cable you up and then you've got to sit on this chair, right? You're a rock back on this chair and they hold your feet and start just, just strapping your feet up because that's where the bungee strapped are you feet. And that was the most scariest bit because like in a swing you can hold onto a rope, right? On a bungee you've got to go head first.
And I'm like, are you kidding me? So the music's pumped up, it's like, okay, you strapped up, you get off. He's like, right mate, she's go time. And at this point like your brain gets really like it's just these really. I can't describe the feeling because everything your brain is selling is like.
Fight or flight is to run away. Like you don't do this. Like this is not human, you gotta, this is suicide. And you tiptoe up and everything just gets really intense. Part B like everything's fuzzy, like you can't really think and you've got to take a photo. If you if you've seen the photo, you probably haven't seen the photo. I look at this camera and look like I'm about to puke. Like, nauseous. I feel sick. And you tiptoe out and now you can see down. And now you're like, oh, like it's. Here we go. And he's like, pushes you out a little bit. He's like, right about eight. Here we go. And he counts down from five. It's like five, four, three, two, one. And I just like, didn't think. I was like, gotta go, Ben. Gotta go, David Goggins. Here we go. And then just dived head first. And it is the most insane freefall for about five seconds. Doing about 220 kilometers an hour. @ the peak, head first into this, like, bungee this. When you hit the bottom, you, you fling right back up. But this fall is insane. Like it's, it's 140 meters. Like the, the side angle shot is insane. Like you fall so far, head first. And then within about 10 seconds it's all over. And he started to like, pulled.
Up. They pull you back up to.
The top from your feet and you got to pull this yellow lever to switch yourself up. And you're just dangling there over this canyon. And man, like, you just get pulled up and you like, honestly, for, for probably 10 minutes I was like, I couldn't talk. I was like, what the fuck just happened? Like, the most rush of anxiety just completely evaporates and you get pulled up and you're just like, what the hell just happened? Thank fuck it's over. I'm alive.
Insane. And the rush, that four second feeling. You can see why people get addicted to adrenaline because like, that's unlike anything I've ever felt before. Like, it is.
Insane. Did you wear like your aura ring or. Look at your heart rate.
Mate.
190, I.
Reckon. Yeah. Oh, mate, that's incredible. So what was the, what was this kind of scariest part? Like the very first thing or like the going up and down and being pulled up? No, it was at all just.
Hectic. It was the tiptoe out to the jump. Because it was like, it was like tiptoe. No, I was like, nah, man. Like, I'm out like this. Like, what on earth are we doing here? Like, what? If you see stats, like, this is dead. Like you're into rocks. It's not water, it's rocks. Head first and, and then it's like five, four. And you're just like, okay, here we.
Go. I remember watching that video. And it's so funny. You're, like shuffling up and your cheeks are pinched so tight, mate, like going up that platform.
Clench. So I was holding a.
Toothpick.
Oh, by. Unbelievable. And, like, did you get, like, really, like, a lot of people I've talked to that have done it, get, like, strain, like in their face, like when they actually go right down and their eyeballs.
Hurt. Your. Your mouth is, like closed, like open, like you can't breathe. Then you. Everything's, like pushed right back because you're on like a couple hundred kilometers an hour. Like, it's pretty.
Insane.
That is hectic, mate. Absolutely hectic. And how do you feel now that you've done it, looking back on the.
Experience? Well, so that. And then I was pumped after that. Well, I was actually super tired. That's what I was cooked afterwards because that was a peak anxiety.
But then I knew we had to do a skydive. So it was like.
So it's like a startup, mate. You win one thing and then you just. You just remember that. Just you just. Everything else is.
So we backed up with a skydive and at this point, we'd lost all soldiers, mate. There was 17 of us on this trip. Forwarded the bungee and they were down to two or three on the. On the skydive. Everyone else was like, nah, I'm.
Out. Did anyone bail out of the bungee that went and bailed.
Out? There was one girl that was up there for probably 10 minutes and she was like, nah, no, not again. But she pulled through and she did it. But I thought, oh, doubt.
Yeah. Wow, what a.
Legend.
Yeah. And then the skydive, mate. So Saturday morning, rolled up, hungover, like, we'd had a big night on Friday. Has. Has rolls into my room 7:38. Because at 8:00am, flight 7:30 rolls in. He goes, are we doing this? I said, man, I can't go home with the shame of myself with the. With.
Them. We'd never let you live it down.
Mate. You would never let. I wouldn't never live it down. Like, I can't leave Queenstown until I.
Skydive. Every meeting I would open with, we're going to win this, folks. Unlike Ben Simpson at skydiving.
Like. And that would be half as bad as what I'd tell myself if I didn't do a.
Skydive. Oh, for sure, for.
Sure. So we rolled up the skydive late, you know, hasn't I completely, like, missed. Missed the safety briefing. Rolled in. Safety briefing was over. We're Fucking on the way out. I've got half a cross on in my hand. The coffee. Miss a safety briefing. We're on the bus on the way. Amazing. Great. Don't know what we're doing. So now it's good. Standard. Give it a day. Get out there, get all harnessed up in our jumpsuit. Feeling, feeling pretty okay. I've done a bungee, it's all good. Then the plane arrives and then we get strapped up. Our mate tells me the guy, the tandem guy tells me it's his second day. I was like brilliant mate. Now I'm even more.
Excited.
I wonder if it really was or if he's just stitching you up so good. They do that kind of stuff. Have you seen the guy that when they. There's like a carnival ride and it's like a free fall drop and before they drop he's like, oh, I forgot to put the thing on. And like he presses the button. They just freak out. I reckon that's what that guy was doing.
Man. Like cheers man. Appreciate that.
So we get in the plane and then it's go time. Like no around. There's probably like eight people in the plane. It's like no seats in the plane. You sit there on padding and you're just sitting right up. Harness to old mate. The door is like a plastic like shutter. Shuts the door and she's on playing up. Right, we're on. We get up the past 10,000ft. You've got to put oxygen on because there's no oxygen up.
There. How long did it take to actually get up.
There?
So the first. So there was 12000ft was the first drop off. So there's people doing 12000ft. That took about 15 minutes of like, of like upwards trajectory. 15.
Minutes. So you got a decent time to.
Panic. There's not at all. It was, it was okay until the 12000 people went. 12,000ft. People went open up the shutters. So the plane like dies off and just like idling and you're on oxygen. And then the shutter opens up, alarm goes and then just people are going to shut the door. Shut the door. And then he goes, take it off me again. I was like what the. Are we about to do.
That?
So you and has are just looking at each.
Other. I don't have as Tommy wouldn't hit the deck. I looked at you up there and thought you're going to be sick. I was like got another five minutes up to 15,000ft. Plane dies off, alarm Goes oxygen out. And there's go time. One guy in front of me ease off and then it's my turn. Hazards behind me to shuffle down at the end of the plane. And that's like, oh, fuck, here we go. Like. Like, you're a long way up. You got to wrap your legs around the outside of the plane, tilt your head back, and just hope for the best. Basically, you come out all.
Right.
I hold it back and he just pushes out. And then you just free falling. And apparently with a tandem, you're doing about 220 to 250 kilometers an hour downwards. It was like the feeling of the bungee, but for 45 seconds of free fall. And it's like you can't breathe. You can't even open your eyes or smile, and you just free falling. And I had a guy that was doing the video and he was on the other side, so he's like, right there in my face on the other, like, here, go on top of me. And we're just free falling. And it was insane. The feeling like you just, like, crazy, like, you go fast. At this point, I'm still shitting myself. Just like, we got really fast. Hope this fucking parachute works.
And then he pulls the parachute and we just get sucked up, like, really quickly. Like, it slows right up. And then the. Mate, the. The. The. What's it called is the pressure. Ear pressure. Yeah, mate, that was the worst I've ever felt. Like, it was insane. I had to, like, blow it out because it was crazy. And then we just glided down and I got to, like, glide the. The parachute. We got to, like, do some, like, tricks and stuff on the way down. And then we land and I was just like, holy. Like, I'm done.
It was amazing. No.
More.
But then maybe there was a.
Swing. But then Harry goes, we've still got the swing. So we get in the bus to go back to the city to get another bus to do another thing.
I'm sick of jumping off.
They stop. So we go to the biggest canyon swing in New Zealand. And at this point, I'm like, mate, I'm. I'm basically a daredevil. I'm gonna be fine. Like, let's freaking roll up, get there, walk out to the. To the thing. And I'm scared again. I'm like, here we are.
Again. This is classic you, where you're like, I'm a daredevil now. The best I've ever seen. I'm going to smash this. Get.
There. Oh.
And with this one, you basically jump out Big, big free fall. And then you swing down the canyon and you hold on to your rope. But you can do different things off the platform. And everyone was kind of doing the normal stuff. One guy drove off a bike, the other one's just people like jumping off. I was like, okay, I'm gonna do a handstand, which is a great idea until I actually go to the position. I was like, oh, I'm doing a handstand off this thing. So get your hands out and they take you upside down and they push you off and it's a free fall. 120 meter canyon swing into the, into the canyon and mate, that was epic fun. By then I was like, right, that was. I mean, the drop was pretty scary, like long way up. But that was the most.
Fun. I saw you do the handstand. I was like, oh, that must just be the position that they throw you off in. Because it's cinema. Like, to hear that you're actually a mad unit and chose to do.
That. You can choose different.
Stuff. Oh, I'll do a BMX for sure.
Mate. There's an Asama bin Laden where you put a bead on your head and they kick you.
Off. Oh, my God.
These guys are.
Crazy. Or a four legged chair, a plastic chair and you're rocking back and forth and they pretend they're like, oh, oh. And then they kick you off and you fall.
Backwards.
These guys are sick.
Mate. Look at another one with a rope and they have a chainsaw and they just like. And this string is like close.
And then it just goes whack. And then you just free.
Fall. Oh, my God, this is.
Insane. Yeah, crazy, right? Wicked, mate. Had so much.
Fun. How do you feel after it? Looking back on the experience and going through those three things, which are probably three of your biggest fears.
Mate. Yeah, mate, I. I feel over the moon that I did it. I feel great. That ticked them off. I'm glad I didn't pussy out. And man, I just had so much fun. Honestly, would I do it again? I'm not sure, but like, I got it.
Done. Fantastic, man. Oh, yeah. All of those, like, they're not fears for me. Like, I would do them, but I just have zero desire to do them. Right, But I know what you mean. Like, I did the abseil down Central park, which was like, yeah, 120 meters, something like that. Heart rate was 192 the whole time.
Man. It's 192.
Wow. Yeah, just like bang, straight up there. And it was just. It's crazy. Your Heart's like jumping out and you're right. When you're at the top, your body's like, you shouldn't do this. You're gonna die. But you're just like, right, I'll do it. Go over the side. That was hectic as well, because they built out a platform over, so you have to absail off the building and back under. And it's just so shitty socially, man. Nothing like bungee.
Jumping. But, mate, the feeling is, like, I like it. I can see why people get hooked on it because it's. It's. It's.
Unbelievable. Like, would you do any of those three.
Again? I'd nearly do skydiving again. Again, I.
Reckon. Yeah.
Yeah. I mean, I probably would do them all if I go back to New Zealand, because I know hazard will peer pressure me to do it again. But, like, so good skydiving I would do again. In saying that, though, that's probably the most. Like, if that parachute doesn't work, like, you're like, that's.
It. You got. They got a spare you, don't.
They? I don't know. I didn't.
Ask. If they do just, like, flip over so they land on the other guy, mate, like, not you.
And just pray that you.
Bounce. Pray that you.
Bounce.
Oh, mate. Mate, nuts. Congratulations. Well done. You've fulfilled your obligation and also had some fun along the way, mate. I love to see it. And well done for not softing out on that whole experience.
Mate. Thanks, mate. Would have been a lot worse if I did softening up, that's for.
Sure. Oh, mate, you'd be copping it. I'd win either way. Like, either, you know, you get to do it, or I just get to rip about it for the rest of your.
Life. It's a lose. Lose for me and win. Win for.
You. Yeah, you'd probably, like, literally, after a week of ripping, you'd probably just fly back and do.
It. Well, literally, I'd be like, I'm taking a week. I'm going to.
Queenstown.
Awesome, mate. I'm sure we will hear more about your New Zealand adventures. Yeah, mate, let's do something we haven't done in a while. We've got meme of the week and then meal of the week. So I've got a couple of memes here. Took me a while to find them. Because I'll tell you what, Ben, it is meme season and they are too spicy. So here's one for you, Ben. This is a dryer that's on fire. Someone's drying Their clothes. There's big fireballs coming out of it and it says they look dry enough.
This reminded me of you trying to work out how to use a dryer and washing machine and somehow the clothes come out wetter from the dryer than where they went in.
Trying to go on dates in your iron a shirt and it's more creased than when you.
Started. This hits in the fields, mate. Gone on a date. Try and try and wash. Try and wash and dry my. My shirt comes out. Comes out dirtier and wetter than it was when I first put it.
In. Amazing. Amazing. All right, we got two more maze, folks. This one. So this is Toby Maguire with a big smile on. It's like dogs when they hear good boy. Then you've got a woman there with her hand up waving cats when the hips.
And then you got James Franco with this really smug look on his face. Birds when they hear my anti government rhetoric, which is so good. I put this one in because a lot of my mates love this kind of stuff. I love propaganda and anti rhetoric. Amazing. And then this one here, this is from Twitter. Why are there pop Tarts but no Mum Tarts? Because of the pastriarchy.
How good, Ben? The.
Pastriarchy.
That's definitely a group out there somewhere called the.
Patriarchy. Oh, mate, there's got to be like a voting group, something like that. Like, you know, like when you go to vote and they got like a little made up group. Oh, mate, definitely. Now, Ben, let's get to meal of the week. You've got a photo.
Here.
Yep. I don't know what I'm looking.
At. I think it's a role needs context. So for the listeners at home that have heard of Queenstown, you may have heard of a place called Ferg Burger. Now, I hadn't heard of this place before until I was letting people when I was going to Queensland and everyone said you had to go to Ferg Burger. Ferg Burger is like the number one rated burger. Join in somewhere, I don't know, Southern hemisphere or it might just be Queensland, I don't know. But the line for this place was massive all day. This and this opens to like 11:30 at night. Line was massive all day and. And next to all it, they've got the. The Ferg bakery, the Ferg gelato, the Ferg bar, Ferg ice cream, Ferg Burger. It's all in a row in the middle of Queensland. These guys know what's going on. So lined up for the chicken burger, obviously got the chicken burger, obviously and it was called the. The.
Cajun.
And I was like, of course, yeah. You didn't even know it was a chicken burger. You just saw that and you ordered.
It.
So rolled him with this burger. And, mate, it was sensational. Chicken was moist, good feelings, fresh buns because they had their own bakery, freshly made. Great sauce. Like, this was 10 out of 10. Chicken burger for me. Highly recommend going to burger if you're ever in.
Queensland. Oh, 10 out of 10, mate. It's worth making the journey just for that.
100. Yeah, don't go for the Scott. I've go for chicken.
Burger. Fantastic. Folks. It's been a while since we've done meal of the week. I've got two. One I've made. One I bought. Let's get into it. All right, these are just some ingredients, Ben. Couple of ingredients there. What I found in my freezer was I made some Napoli pizza dough a while ago, had some leftovers and then made some more. I had some leftovers, so I froze it all. Ended up with eight pizza doughs. So I'm like, all right, Yesterday I had a day off. I know, it's a miracle, right? So I'm like, what am I going to do? Ah, make some pizzas. Get in pizza Ola mode, let's go. So, Ben, we've got some nice ripe cherry tomatoes. It's just so red and juicy and delicious. Got some mixed olives with some herbs across it, Kalamata olives, stuffed green olives, jalapenos. Got some herbs in the background there. Got some oregano, some basil from my plants, mozzarella, parmesan, pineapple. Love pineapple on pizza. Let's go. And then I took a couple of photos. So I want to see how this frozen dough goes. I always make the fresh stuff. I made the fresh stuff, froze it, let's see how it goes. And mate, it was.
Cracking. This is my dough that you just.
Froze. Oh, this is my homemade dough that I froze. So. And it just. Oh, it was just unbelievable. Just stretches within like four seconds. So you have to kind of like scrape it off, throw it in some flour, and then you just do, you know, mad pizza movements. And it goes from, you know, off 4 inches across to, like 12 in, like, a few seconds. This dough is just super hydrated. It's 70% hydration. Here. We've got a margarita, which was just amazing. So the way you make these as well, you stretch out the pizza dough, you put your sauce on, you grate on some parmesan, you put on your mozzarella cheese. And then you put your toppings on bang in the oven about 400 degrees in the wood fired oven. And they're done in about a minute to a minute and a half. It is unbelievable. And so this was just sauce, basil, cheese. And I ended up throwing some tomatoes on there as well because they're just in season and delicious. Y Then the next one ended up throwing on some pepperoni, some olives and some tomatoes and oh my God, this was to die for. It had just the hate. It was like eating something from the Mediterranean, man. It was unbelievable. And then I just had all this leftover stuff. So we've got olives, we've got pineapple, we've got jalapenos, plus a bunch of other stuff, oregano, basil, mate. I ended up making a pizzas and then we had some beers. Ben, we had some beers. So we've got from both of these wa companies now brewing and other side brewery. From otherside we've got their super Sabbath which is an imperial pastry stout, something like 10 something ridiculous and flaming lamington from Nail Ale which is really interesting. Coconut chocolate stout with chili. And this just went perfectly with pizzas. But then Ben, the pista resistance bang made a dessert pizza as well. Mate. So this is just. You throw in a blanco. So this is just pizza dough. You've stretched out, chuck it in, cooks relatively quickly, take it out, spread Nutella over the top and just beautiful in season strawberries. And this was incredible. I ate this whole pizza myself. Like it was that good, man. Oh. So for these pizzas and they'll, they'll frozen dough so they weren't as good as fresh, but they were cracking. I'd give them like eight and a half out of ten. Man. They were just, they were delicious. They were awesome. Mate. Frozen's a way to go. Love it. It's just. Oh yeah, I thought it'd be crap, but it.
Wasn'T. I used to make homemade pizzas when I was younger. I didn't have a wood fired pizza though. The homemade base and dough, like you can't go.
Wrong. Oh, you can't. And you can make this kind of stuff in your oven as well. Crank your oven to the max. Throw in a pizza stone, you can buy from kmart for like 10 bucks and away you go. Now Ben got out of my house, believe it or not, I actually left my house and I went for a lunch and I thought, oh, where am I going to go? And I'm like, I know the spot. And bro, have a go of this this is a barn me that is off the hook. If you're listening to the pod, go and look at this photo because it is incredible. And this is. I'm pretty sure this is just the standard option. You can actually get double Meat Hustle. This is from.
Bibral Lake lunch bar. Bunch of Vietnamese guys working there. And they're just Aussie as they just like all good Australian acts. They're hilarious. This is the fattest banh mi I've ever seen in my life. They've got charcoal outside. They're cooking up all of the pork. This is beautiful. Pork belly. They've got char, si, pork, chicken, all these different ones. I got the pork belly with chili, coriander, all of the crispy skin across it. You can even get more than this, Ben, Just look at that bread to meat ratio, that is off the hook. Usually ratio is inside. Usually you're eating all bun and a little bit inside, or, you know, they have it in the display case band and it looks full, but then the bottom's all empty and you just eat bread that's a rug pull and you feel ripped off. Whereas with this, like, the meat is just spilling out. Mate, it is incredible. There's so many people. This lunch barn, they're just banging out these barn mes. This was only about 10 bucks. It was.
Incredible. We're young. When I come to.
Perth. All right, mate, let's do it. And seriously, it's coming, baby. 10 out of.
10. Oh, there it.
Is. I would eat all of my lunches there until the day I die, which will probably be soon. I have a heart attack from all that pork. But this was delicious, Ben. It was incredible. Just the chili and the way they balance it out. You notice not all the chilies in one spot. They've got like a little line of chili going there. They've actually got the crackle and they've crumbled it up. So through the whole thing. So you're getting like a bite of pork and the fat kind of coats the inside of your palate. Then you've got the crunch of the skin from the pork, the crackle. And then you get the freshness from the herbs and the bite from the chili. And then you've got. They've got the liver on the inside as well, like the pate. And that just takes it to the next level, as well as the pickled vegetables and. Oh, my God, Ben, this is incredible. We'll go here for lunch. I love it. But you're in Perth next week. Let's do.
