When I first became environmentally conscious, it was my 2nd grade teacher who started talking about leaving the planet as we found it. Then life goes on, and now fast forward, I owned and operated restaurants for years and years, always been in the food business. I landed up, of course, wanting to go something that was food-related. I saw how much food was coming into the pantry, and it just started turning then and there that I was like, wow, how does this all come together? And so A few years back, I started a website called Hudson Valley Eats. It was after 3 years or so of that, doing that website, I said, why am I doing this? What's the real meaning for this website about food? And then I realized that I could use it as a platform to make sure everyone eats in the Hudson Valley. That's when I decided to turn the website into more of a website that highlighted sustainability.
