How To Make A Healthy Waffle Sandwich

A short YouTube cooking/demo where Ben Greenfield makes a gluten-free waffle sandwich using feta, spinach and avocado, then converts it into a "waffle salad" by adding bean sprouts and a tahini-lemon dressing. The video is informal and improvisational (mentions leftover waffle mix, cleaning avocado pit, and difficulty eating the sandwich so he eats it with a fork and knife).

Hey, it's Ben Greenfield here. I'm making a special recipe. It's going to involve an avocado. Eating an avocado is not the recipe. But sometimes when you get an avocado and you take the pit out, it still has avocado on it. And you want to get rid of the avocado on the avocado pit.
Just in time. I hear my waffle beeping. That's how you clean off the avocado pep. Mmm.
Sounds like my waffle is ready.
So there it is.
Nice, crispy waffle.
What am I going to do with this waffle?
It is a gluten free waffle, by the way.
It's actually.
Yeah, it's perfect. So I'm going to take this waffle.
I'm going to put it over here, stay, and then I'm going to go.
Over here to my cupboard and I going to grab a plate. Some of you are probably suspecting what I'm about to do. So we're going to take that waffle and the first thing that we need on that waffle is some feta cheese. Take some feta cheese and we're just going to kind of sprinkle that along the waffle just a little bit there. Don't need too much feta cheese. Maybe a little bit more.
A little bit more. Sucker for that feta cheese. Okay.
And then the other thing that we.
Need is of course, my ingredient that I put in everything, which is spinach.
By the way. I should have said this at the beginning. I'll say it now that you're on the edge of your seat. You probably know this already, but we're.
Making a waffle sandwich.
So the next thing that we need are the avocados. We're going to throw them on the waffle. This is kind of like that wrap.
Video that I made.
That's W R A P video. Except I'm at home now and yeah, there was some leftover gluten free waffle mix sitting in the refrigerator and I hate to let waffle mix sit there and go to waste, but I already had breakfast and it's lunchtime, so this is my solution. So there we have it. Waffle sandwich.
So what we'll do is put a little bit of salt and pepper on that waffle sandwich and then munch it on down. It's kind of like a Greek gyro meatless breakfast for lunch. Surprise. The waffle sandwich ended up being very difficult to eat like a sandwich. So I instead made it into a waffle salad. And what I've done is actually added bean sprouts to the top with a little bit of a tahini lemon juice dressing. Okay.
Tahini lemon juice dressing.
And then I'll just eat that with a fork and a knife through the actual waffle.
Four second rule.
