Short excerpt from a YouTube interview (Ben Greenfield with guest Frank Lipman) promoting making vegetables—especially leafy greens and cruciferous veg—the foundation of meals. Lipman recommends building a layer of mixed vegetables as the main plate and adding fats and proteins (eggs, etc.) on top or as side plates to make vegetable-forward eating easy and habitual.
Hey, it's Ben Greenfield.
I think veggies, especially the green leafies and the cruciferous vegetables for most people obviously not everyone should always take up, you know, I say the most of your plate should be or your main course or your main plate should be the vegetable plate and your side plate should be your fat and your protein. So I'm a big believer in like eating a lot of veggies and how do you get people or how do you make it easy for people to get those veggies in to them. So these are the tips that I find really helpful. Like for instance, just make a layer of green mixed vegetables the foundation of every plate and then on top of that.
An easy go to meal for my wife is my chef basically, but she does this foundation of veggies and puts some eggs on top. So something like that. Just always make your veggies your foundation and then put something on top.
