Hey, you guys, it's Ben Greenfield. And I just got done interviewing Jacob Dixon of Dixon's Farm Stand Meats. Now, when I walk into a butcher shop or the meat section of my local supermarket, a lot of times I do get confused about natural versus humanely raised, grass fed versus grain fed, what a lot of these labels mean. And also the best way to prepare and use the meats that I'm buying. Now, Jacob and I went into all this and I picked up some really interesting facts about, for example, why he's actually okay with the use of antibiotics in certain cases or why grass fed meat in many cases is not always the same. And there are some grass fed feedlots that are good and then some that really are not that great at all. And so grass fed does not necessarily mean something is good for you. We talked about the words like natural and how that means pretty much nothing. We also talked about the concept between curing meat, dry aging meat, wet aging meat, and whether or not the mold and the fungus that grows on the meat and makes it soft in that process is actually healthy for you and what you need to be aware of when it comes to purchasing things like charcuterie. We also talk about how to do some of this stuff yourself if you're one of those people that wants to cure meat yourself. We talk about a good setup for that temperature, humidity. And we also went over some really cool book recommendations. He gave all sorts of interesting information on some of his favorite books when it comes to meat and learning some of this DIY stuff. And he finally gave his ultimate steak recipe, which sounds fantastic and I'm actually going to try this weekend.
