Dr. Jennifer Kessmann explains a comprehensive food panel testing 88 foods for IgE, IgG, IgG4, and complement reactions. Test scores shift based on what you've eaten recently, and high gluten reactions warrant strict avoidance due to gut permeability links. The strategy is elimination, re-challenging, and gut healing.

Hello and welcome to our discussion on your allergy tests. I decided to make this video so that we could spend more time together during our appointment going through your particular results, and so I could make sure I answer all of your questions. There are several concepts here that it's very important for you to understand so that you can evaluate your own results and be able to use the information for yourself today and in the future. This test is actually the first one that I did, and it was on myself, of course. I had used other food sensitivity testing companies in the past and, and decided that this was one of my favorites. And, and the reason being is they give you so much information. They give you the IgE, the IgG4, The IgG and the complement reactions for 88 different foods. Remember that all of these tests are not perfect, although they do give us a lot of good information. A few concepts to remember is that if you've been avoiding a food for a period of time, your reactions may be lower to that food. And the same may be true that if you're eating a food a lot or regularly, you may have higher— Reactions, but those also may be part of your problems and the reason that we were doing this test. So let's go through some of these big concepts here, and I want to kind of show you a few things. So allergies involve the IgE response, and IgE responses are related to true allergies. So that would be like you eat peanuts, you have an anaphylactic reaction, you start wheezing, you have hives. You know, everybody has heard of that, I think. On the other hand, maybe a milder allergic reaction may have more subtle findings, say headaches or tired. Maybe you're very tired after eating certain foods. Maybe you get nausea. Maybe you get Swelling, maybe you get bloating later in the day. All of these can be related to potential food allergies. Some people get racing of their heart or tachycardia related to some of these allergy reactions. And then the IgG reactions over here, those are related to food sensitivities. And this is a little different type of immune reaction. It takes— Several days sometimes for you to really have a sensitivity issue. So these are, you know, more subtle, and it's really harder to detect the food that's causing the problems unless you know these type of results and you eliminate it. All right, so another strategy is to eliminate anything that you're considering being a problem, and then seeing if that problem goes away, and then adding it back in if you are brave enough and seeing if that problem resurfaces. So that's another way to look at, you know, how these results are playing out for you. Let me go through these 2 other columns which you see here. One is the IgG4 and then the other is the complement. So complement, basically you can think of it as adding to This sensitivity. It's like gasoline on the fire. So if you've got a high number here and you've got complement reaction, that will add to that reaction. Generally, I say that these reactions with complement may have been going on for a longer time, and they also may be more severe, and it may be that you've got more immune issues in general if you've got a lot of complement reaction. IgG4 is a blocking antibody, so it's the— it's how people can get benefits from allergy shots because this IgG4 will block the same receptor site to prevent release of histamine and all of the cytokines from cells of the immune system when IgE binds. So this is a blocking antibody. Here's a caveat: the blocking antibody can add to your sensitivity. So if your sensitivity is low and your IgG4 is high and you have a high allergy, maybe that's a good thing.
But on the other hand, if you don't have an allergy and your IgG4 is high and your sensitivity is high, then that IgG4 becomes more of an issue.
I hope that all makes sense. Let's go through some of these results here on mine and a couple of other big concepts. You know, food is something that we all want to enjoy, and we really don't want our immune system to react to food. But on the other hand, they have put Aspergillus mix in there. That is mold. We want our immune system to react to mold, so we want an immune reaction.
How much? I don't know. It depends on how much mold is around in your area, how much you've been exposed to in the past, but also if your number's very high, it could suggest that you're getting exposed to Aspergillus now at a higher level. And if we can remove that burden from your immune system, it may allow you to feel better. And I hope that makes sense. And, and then the other one that's on here that falls in that similar category—
oh, not letting me scroll, let's see—
no, I know it— is this Candida. And Candida is yeast, and everybody's probably heard of a yeast infection. You can get yeast growing pretty much anywhere in your body, especially if your immune system is compromised. And If you have a reaction to yeast, that's a good thing. But if it's too high, it suggests that maybe you've got too much yeast that your immune system is having to fight. And I would say at this time that that was probably happening to me, and I did do yeast treatment to help with that. But, um, so all of these are theoretical, and we have to use this information To try to help you with your reactions.
So, and then calm your gut.
So, right, if these are happening primarily in the gut, we want to heal the gut so that you can prevent further food reactions in the future. So sometimes people are wanting to just eliminate a few things.
And for me, gluten—
and when I did this test, I didn't realize how bad of a gluten reaction I actually had. But this is like one of the highest allergic reactions to gluten I have ever seen. So if you are higher than 30, I'm sorry, but we really need to eliminate gluten. And I can tell you from my experience with using these results that this really has worked for how I feel, both physically, emotionally, mentally, my energy level. All of that improves if I am working on this. And again, you can eliminate some of these food reactions by healing your gut. So that's probably going to be another big piece of what we do together is healing your gut so that perhaps your food reactions go down. Now, if you've got a high gluten reaction, and most everyone that I test has a gluten reaction, and it's actually been proven that everyone that eats gluten gets leaky Gut permeability, I'm gonna use the more professional term there, gut permeability in response to gluten, everyone gets that. But I think a lot of people are able to tolerate it because they don't have any other issue going on. They don't have yeast. They aren't eating a whole bunch of other things, or maybe they're just eating gluten here and there and they're not eating it every day. So again, gluten is going to be, and hopefully you've already gotten the handout of gluten-free foods, It's mainly going to be in wheat, barley, and rye, but it also can be used as an additive and a flavoring in lots of different processed foods. If you're eating meats, vegetables, and fruits, so long as the meat is not processed, you probably will not be getting very much exposure to gluten.
I think that might be all that I wanted to discuss with you. I can tell you that some of my lower reactions were still very significant. This pineapple reaction, you know, was extremely significant. I was eating pineapple every day in my smoothie, and nearly every day, and, you know, it's only a 20, but this 24 in combination with this was extremely significant. And so eliminating that along with beans and peas, which I had no idea were also an issue for me, but this green pea reaction was actually very significant. So some of these lower reactions, be aware of them and take note of them because they may be playing a role for you as well. I usually will go through these Although, as I explained in the beginning, this is looking at basically a computer analysis of your results. I would say on the less restrictive, you know, probably everything here is significant. But when you go to the more restrictive, we may have a slightly different list that we create on your 8 by 10 page. So anyway, looking forward to our appointment, and I hope this is helpful.
Thank you.
to answer some of your questions initially, and we will certainly go a little bit more in depth when we go through your individual results. All right, have a good night or day or whatever you're doing right now, and we will see you at your appointment. Thank you.
