JJ Virgin says commercially processed seed oils leave toxic residues like hexane and skew your omega-6 to omega-3 ratio in ways that promote inflammation. She recommends whole-food fats instead, with omega-3s from flax, chia seeds, and wild-caught fish.

Seed oils are toxic unless you're using the right types in the right amounts. Here's the deal. If you're using some of those commercially processed seed oils in big amounts, there's two problems. Number one, you can get some of the toxic byproducts like hexane. But number two, we have an omega-6 to omega-3 ratio. These are both essential fatty acids. And if you push too hard on the 6 side, it can be pro-inflammatory. You got to have the balance between both of them. The takeaway: eat clean oils. Minimally processed, or better yet, whole fat. And make sure you're getting in great omega-3s from things like flax, chia, and wild fish.
