#18 - Autoimmune disorders: It’s not the chia it’s your leak gut with Dr. Daryl Gioffre
22 Jan 2020 · 23 min
In this episode of the Jorge Cruise Podcast, host Jorge Cruise interviews Dr. Darrell Joffrey, author of Get Off Your Acid, to address concerns from listeners about autoimmune issues and the Flat Belly Challenge. They explain that autoimmune flare‑ups are not caused by chia seeds but stem from a leaky gut created by an acidic, toxin‑laden diet. The conversation covers how excess dietary acid (from sugar, grains, animal protein, coffee, wine, etc.) depletes minerals, especially magnesium, potassium and bicarbonate, leading to systemic inflammation and gut permeability. Dr. Joffrey highlights the importance of mineral repletion, alkaline foods, and specific supplements (Daily Minerals, Real Salt, Himalayan pink salt). They promote a new “acid‑kicking coffee alkalizer” powder that adds minerals, coconut/MCT oil, Himalayan salt and fat‑burning enzymes to neutralize coffee acidity while preserving its benefits. The hosts also reaffirm the health benefits of chia seeds—high in omega‑3s, protein, fiber, and minerals—and explain how soaked chia creates a gel that aids gut cleansing. Throughout, they plug the Flat Belly Challenge, the upcoming live appearance on Live with Kelly and Ryan, the Get Off Your Acid book, and Jorge’s free weekly newsletter, encouraging listeners to join the VIP list.

My mission is to give you simple ways that will empower you to live as you choose.
Welcome to the Jorge Cruise Podcast. All right guys, hey, it's Jorge Cruise and welcome to the podcast. I have a very special guest on today. Uh, we're breaking protocol. This is really a special conversation because a couple days ago, you guys know about our Flat Belly Challenge where for 19 days you eat in a 4-hour window and you get to eat the foods you love. I love pasta, I love a little glass of wine, all these things that we all are used to, but then for 20 hours We're fasting, and you guys have seen this on Tamron Hall's show. You saw Dorinda talk about it, uh, and it's really a way of, of enjoying the health benefits of getting a flat belly by using what we call flat belly waters and meals. And so the emails have been coming in, people have been dropping 8 pounds in a week. I mean, Dorinda lost 8 pounds. But I've been getting a few people that have a, a, an issue that, uh, we call AIP in the, in the nutritional community, an autoimmune issue. And so The number one person I go to for autoimmune issues, leaky gut issues, health issues, inflammation issues, uh, is my best friend in the world, and he's here in New York with me, uh, Dr. Darrell Joffrey. And you guys know he's the author of Get Up, Get Off Your Acid, an incredible book. And he's on the line here with me, guys, because he kind of wanted to— I asked him, I said, Dr. Darrell, you know, a lot of my clients are saying that this autoimmune issue, they're that they're experiencing may be causing weight gain, and they read on a blog that autoimmune is magnified and worsened with chia seeds. And you guys know how much we love chia seeds, so I reached out to him and a few other really trusted friends, and Dr. Darrell really wants to set the record straight for all of us because he was at the party. And Dr. Darrell, how are you, buddy, by the way? Say hi to everyone, jump in.
Hey, Jorge, so great to be on with you and all of your listeners. Happy New Year 2020. Yeah. Wanna say congratulations. Yeah, the party was absolutely amazing the other night. And I've been doing flat belly water, it's incredible. And by the way, you mentioned Dorinda. I was adjusting her last night in my office. In addition to that 8 pounds you mentioned, I have to add that she's down 4 inches in her waist. Woo-hoo! What you do works. You combine that with the cruise control fasting, it is a one-two punch to get your body on track in this new year. Not only to lose weight, to feel good, but to be healthy, to be energetic. Weight loss is the byproduct of all that. So I'm glad we're talking about this. And I'm glad we're talking about chia because chia is one of my most favorite foods in the world. So I'm really excited to dive in, really get down to the true cause of really what's happening in the body with people who are dealing with autoimmune issues because we gotta stop blaming the chia. It's not coming from chia. There's other things that are going on in the body that's creating this. So it's great that we're talking about it, but I just wanna say congratulations to you. on the, the soft cover of the book. It's amazing. And Prevention magazine, congratulations. You're just— you're doing amazing, and I just love and appreciate it. Thank you, buddy. And you're really helping so many people, including me. So thank you.
Oh no, of course. And so let's set the record straight for anyone listening that's on this 19-day challenge that we've been doing. And we're going to do one every Monday, uh, the first Monday of every month for this whole 2020. So we're going to be doing these every month. And so for anyone out there with autoimmune issues, to Tell people, break it down for us, buddy, in a minute or two, what is an autoimmune issue? What is AIP? Why do people worry about this? Because obviously, you know, our immune system is important. We don't want to have a weakened immune system and that, you know, that can cause inflammation, bloating, belly fat, all that. What it is, and then what people are saying, it's the chia. And then you told me when you texted me, you know, what you thought, you were like, there's no way it is. And then it's more the acid that is in our bodies. So take us through a little bit of what is this autoimmune problem that people seem to have, and then tell us the truth, because it really, I don't think it's chia, at least what you've told me, and I think we need to set the record straight. So if you don't mind, buddy, take it away, please.
Yeah, 100%. I mean, you nailed it. The immune system is critical for us to be healthy, especially this time of year. You know, I can't tell you, Jorge, you know, we're in New York City, it's 27 degrees today, freezing. And I can't tell you how many people I see, patients and people that I know, are getting sick. This, you know, flu's going around and there's bronchitis. And again, it's not about the bug, it's about the terrain. And this is so important that everybody understands that the flu doesn't make you sick, it's the complicating factor to why you get sick. Yeah, but the terrain has to be ready to receive that. So when your body's tired, and this happens after the holidays, we go from Halloween to Thanksgiving to Christmas and Hanukkah and New Year's. And, you know, people are literally pumping their bodies up with these acidic foods, things like sugar, grains, artificial sweeteners, too much animal protein, dairy, carbonated water, and even coffee. You know, coffee, there's a lot of great health benefits to coffee. You know, we talk about it a lot, but here's one huge downside. It's loaded with acid, and those acids are draining you of the minerals that you need to keep this immune system strong and to keep your energy strong. So we gotta keep this immune system really, really healthy. And Jorge, here's the problem with acid because autoimmune issues, we have to go a little bit deeper. We gotta go, as I say, farther upstream to find the true cause. You know, so many people say you have Hashimoto's or hypothyroidism or rheumatoid arthritis and they kind of start saying it's your body attacking itself. I'm gonna tell you, Jorge, I have done a, thousands of live blood cell testing in my office, you know, on all different ages. And you've come into my office, did it with me. Yeah, it's amazing. And we literally see these white blood cells, these neutrophils, and these killer cells, and these lymphocytes. We see what they do. And what happens is when the body is overtoxic and when these acids are coming into the gut, you got to think about what acid does. It's corrosive, Jorge, and they literally punch holes in your gut.
Wow.
And what happens is these toxins, like um, undigested protein and yeast and fungus and mold and mycotoxins, they leak into the blood. And once they get into the blood, which is not where you want them to be, they basically go on attack and they go systemically to the body. They create inflammation and they start attacking the body. So it's not these white blood cells or immune system attacking itself, it's the toxicity in the body. And I'm going to tell you, and you probably see this with your clients too, yeah, we have seen so many increases increase in thyroid issues, especially hypothyroidism. And what the research shows is that the thyroid is the first gland to be attacked by toxins in the body. So the skyrocketing of thyroid issues in its autoimmune category is not the body attacking the thyroid, it's the toxins. So at the core of this, Jorge, if you're dealing with an autoimmune issue, and again, I don't care what name they put on it, what diagnosis, because only what does diagnosis mean? Di means two agnosis means not knowing. That means the patient and the doctor don't know what's going on. So let's, let's stop naming and calling something what it is. Like, okay, I know what's wrong with you, your head hurts, you have a migraine headache. Well, of course, but what's the cause of that? So my point in saying all this is that we got to go upstream and look to the cause. And the cause of autoimmune issues, 100%, is the leaky gut and the toxic acidic lifestyle.
Hi, this is Jorge, and I wanted to interrupt the show just for a minute because I want to make sure that you're on my VIP mailing list, uh, for future podcasts and for insights and shortcuts on how to improve your health, uh, from everything on intermittent fasting to yoga to 8-minute workouts to how to just work better and how to have less stress and also how to manage pain. And it's totally free. Tell your loved ones about it, join it. It's over a quarter of a million people that are getting this email and it's going out every Monday and I want you to be a part of it so you know what's coming up next every week. All right guys, let's get back to the show.
But most of our clients, most of my clients have sweet teeth, so obviously swap out sugar for stevia is a simple swap. Now here's the other thing that I love, and I think what's brilliant what you've done, buddy, with your products to get out— get the acid out products that you have are so incredible. The minerals, the greens, and then you have something new for coffee that I want you to talk about that's coming out this week, uh, and you're going to be on Live with Kelly this week. So We'll talk about this because here's what I think everyone needs to hear from me, and then if you can restate this because it's so simple, but you know, with our whole Flat Belly Method, a lot of people will start their day with coffee, which I've been doing as well, you know, and I usually either put butter or MCT oil or coconut oil, or I'll use your powder, which is a coconut-based type of replacement for creamer, which is more alkalinizing, which I love, and so I try to buffer it with healthy fats, and all these healthy fats will buffer some of the acid, right, right, Doc?
Yeah, I mean, for the most part, oil is one— coconut oil is the most powerful foods on the planet. But when you look at the true buffer of acid, it's minerals. Minerals is key. Um, and I'm going to tell you, that's one of the biggest deficiencies we see in our clients— things like magnesium, potassium, bicarbonate. And magnesium is the big one. Um, we got to get the magnesium levels up. So more like avocados, more dark green, dark green leafy vegetables. Those are the things. And when you look at magnesium deficiency, you know, not only is it causing constipation Not only is that causing us to crave sugar, so if you're craving sugar, you have a magnesium deficiency. But let's take it one step further. What's the number one neuroprotector of your brain? It's magnesium. That's so critical though. So, so we got to get more of those. And it's interesting you talk about Kelly Ripa. She's one of my most favorite people in the world.
And, and you're going to be on with her this week, correct?
Tomorrow. Yeah, tomorrow morning.
Tomorrow, guys, mark your calendars, your TiVos, get your, your DVRs to record live with Kelly. So tomorrow you're going to be talking about this as well.
Yeah, we're going to be— we're going to be talking about, about, you know, about a balanced lifestyle.
Yes.
Healthy recipes. Two of her favorite recipes from my book, which is obviously Get Off Your Acid.
Yeah.
But in 2015, when she first introduced me to her audience, she had just done my 7-day alkaline cleanse and she's like, this changed my life. But then she said something very important and I learned so much. She said, but I didn't give up my coffee and I didn't— and she was basically making a joke about—
but wow, my coffee.
But that's, that's what this is about.
So here's the good news: you don't have to give up your coffee. Or, I mean, and not to throw wine, alcohol, under the bus, because I like glasses of wine. And you've met Shawn, and we'll have a glass of wine at night, whether it's socially or whatever. But wine and coffee, two things that a lot of my everyday clients and celebrities, including Kelly Ripa— I know she loves her coffee and, you know, a glass of vino. So that's all acidic. I hate to ask you to confirm that, but that is acidic. But then the good news is there is a way, as Kelly says, to have your coffee or wine and drink it too, right, buddy?
Yeah. And, and, and what I love about her, and she said this, you know, when she, when she was talking about it, is that it's not about deprivation, it's about moderation. But I'm going to take it one step further.
Yeah.
And, and that's right, because it's 80/20, but it also needs to be about acid liberation. So you can enjoy those things, you know. And, and the other day she talked about how she hasn't drunk, uh, she's not drinking wine anymore. So she's really just She defines balance. But here's the thing, you guys, you don't have to give these things up. But what we need to do is the good, better, best philosophy. So if you're gonna have a cup of coffee, number one, make it the best cup of coffee. It's gotta be organic coffee. And number two, you can do what Jorge does where he uses our product, he uses butter, coconut, whatever it is, but we made it easy. So what we did was we created a powder to turn your acidic cup of coffee into a cup of acid-kicking coffee. What it is, is it's an acid-kicking coffee alkalizer that— and it comes in 3 or 4 different amazing flavors. We have salted caramel, we have mocha, we have vanilla, and a plain flavor. But the key thing that is really going to make this thing a game changer, Jorge— yeah, it's got your acid-fighting minerals, which neutralizes the acid so you can enjoy the upside of coffee minus the downside. But we took it one step further. We added coconut oil, MCT oil, to give you that energy boost and those healthy keto fats to suppress hunger, optimize brain function. We added Himalayan salt, which has 84 minerals, which improves your craving for sugar. And then here's the best part: we added fat-burning enzymes to help turn your body into a fat-burning machine. So I'm really excited about it.
And, um, oh no, it's amazing, and it tastes so good, especially the salted caramel. I may have to ask for an extra, uh, serving of that, buddy, because it's so delicious. It's like, it really makes it like almost like a Starbucks drink. It's so good. And then that way you can have your coffee And now how about this, buddy, for people at night that love their wine, I'm thinking about so many of my clients love wine at night. I mean, I'm so happy Kelly is cutting back on that, but what would you say for people that have a glass or two of wine? Wine, just set the record straight, does cause acid, correct?
Yeah? It's, yeah, it's highly acidic, it's loaded with yeast, it's loaded with sugar, but again, it's about helping your body deal with what you're putting into it. So one thing I do, I tell people, we have our Daily Minerals, it's a neutralizing powder you can do before and before you go to sleep as well. That's one thing. If you don't have our powders, let me give you another tip. You can get a quarter teaspoon of Himalayan pink salt. Add that to 1 liter of water, drink that, you know, in the early evening, late afternoon. So like kind of before you're gonna go out. And again, those trace minerals are gonna help alkalize your body and your blood to deal with the acid onslaught that's coming.
I love that. And remind everyone the brand that you got me to do here in Utah, it's The Real Salt, is that right?
Yeah, it's Redmond Real Salt. Um, that's a great trace mineral. And what I love about it is that they mine this deep, you know, in the Great Salt Lake in Utah. It's never been touched by man. So there's no— you know, a lot of these sea salts, Jorge, as we talked about in your former podcast, yeah, plastic. Yes, that's not what we want to be putting into our body. So the Himalayan salt and the Redmond Real Salt are two ones that me and you love because they're unadulterated. They don't have those plastics, and they really help to alkalize.
It's amazing. So I feel like the great news is, for anyone out there that's following the Flat Belly Method, the chia seeds have your endorsement, of course. I mean, they're an ancient food. Maybe the prehistoric man didn't use these, but definitely they're a superfood from South America, from Uruguay, Paraguay, all this, and they've been using this as a superfood. The ancients used this for energy, for health, and it's going to help us stay healthy. So there's no need to stop using chia seeds. I mean, One last time, sing it for me.
If we have a couple minutes, I think it's important we talk about—
tell us—
is so powerful.
Tell us, if you don't mind. Yeah, take it away.
And, and Jorge, your clients are dropping weight left and right, but let's put weight loss aside. It's an amazing benefit. That's kind of what we all love, right? Yeah. Let's talk about really what this is about, which is what this article was saying, that it was triggering leaky— um, that was causing autoimmune. I'm just going to tell you that that's not the case. It's misinformation. Chia seeds are one of the most powerful foods for the body. They're loaded with 50% omega-3 fatty acids, which are so critical to lower— they downregulate inflammation, they optimize the function of your brain. There's 20% protein, so it's a great plant-based source of protein. They're high in fiber, so this is critical, guys. Oh yeah, for your gut, for the microbiome. Yeah, this is going to help move. And what happens with your Flat Belly Water, which I love, You know, chia seeds are hydrophilic, and what that means, when you let them sit in that water for a few minutes, they kind of gel up and they blow up up to 27 times their size. And then they go into all those little nooks and crannies of your small intestine, which is crazy. It's got the, the surface area of a tennis court. And basically it's like an internal shower. It goes in and it helps get rid of all that kind of crap— C-R-A-P, I say— completely refined and processed junk that's been building up in all the years from all of our old diets and maybe present diet. So it's really going to help move things out, and it's loaded with minerals. So they're going to alkalize, they're going to help the leaky gut, not hurt the leaky gut. And then there are these healthy plant-based keto fats. So, yeah, I mean, I could keep going on and on about the benefits. And you mentioned, you mentioned something about, about the kind of Paleolithic time. And one of the reasons why the Paleo diet is so powerful is because it's 80% of it is this plant-based diet.. But if you look at the other 20%, yeah, it's a highly acid-forming diet. And what I mean by that is 38% of the average paleo diet is protein, animal protein. And there's a big problem with that. This is not about me saying you need to be vegetarian or vegan. This is not what this is about. What this is about is once the animal protein caloric-wise goes more than 15 to 20% more in your daily diet, there's a huge problem that happens. It turns to sugar in your body. So unknowingly, you're jacking up your sugar through a process called gluconeogenesis. So we got to be careful of the protein. We got to do it in moderation. And there's a great formula that we have in my book that tells you exactly what you need. And one other thing I want to talk about, because what the, what the article also said was that chia wasn't created in this paleo time, so there's no reason why we should be eating it. So I understand if you're a hardcore paleo why you would think that, but Again, one huge problem with that, Jorge. We are not living in the Paleolithic time. This is true. 2020. Yeah, we didn't have the massive amounts of sugar and fructose. That's massively changed. We didn't have the grains. We didn't have Wi-Fi. We didn't have the emotional stress. We didn't have the noise. We didn't have all of this external stimuli. So my point is that we have to be with the current time and we have to give our bodies what the body truly needs. To alkalize, to energize, and to get off your acid. And I'm telling you, chia is at the top of my list to keep your body healthy, to suppress hunger, and most importantly, during your intermittent fasting and your cruise control fasting, this is the best cheat to get through it. So I love what you've done with Flat Belly.
Thanks, buddy.
It was a genius concept. And again, it's something I do, I know Dorinda's doing, and it's just a really— everyone's got to do it.
Yeah, and it's simple. And I'm so happy that we really clarified. I think those people were worried that the chia could cause some sort of, you know, immune issue. And if anything, it's, it's, uh, it's something that nurtures the body. It's not going to hurt the body. And now we have a way to, you know, not that we want to intentionally hurt ourselves with coffee or wine, but we want to enjoy life. We like the energy coffee gives us, and we like to feel relaxed with the wine. And so now with your products, I mean, these incredible minerals you have— tell everyone where they can get this stuff online and on, on your social so they can find you. And then Remind them again tomorrow what time you're going to be on. It's live nationwide on ABC, Live with Kelly and Ryan, and that's Kelly Ripa. But tell them all your, your, uh, your website and, uh, your, your social, and, uh, let them find out where you're at, buddy, please.
