Joe Cross makes the Mean Green juice from Fat Sick and Nearly Dead using a Juiceman Jr. He feeds apples, ginger, cucumber, celery, kale, and lemon through the juicer, noting that kale yields almost no juice and worrying about losing fiber in the process.

Okay, so we've got all the vegetables cut down, ready to put in the Juiceman Jr. I'm a little bit disadvantaged here by having a small juicer. From doing this the first time this morning, I realized quickly that this definitely slows me down a little bit and creates a little bit extra work for me, but it does do the job. So anyway, it's going to be noisy, but let's walk through this quick. It's really simple. I would absolutely use a bag to catch all the rind and everything that's going to be the fibrous matter that's going to be coming out of here. This makes your cleanup much, much easier. And other than that, here we go. This is the mean green. It's part of the reboot diet. Start with the apples. I'm going to mix things in here randomly. A little bit of ginger, cucumber, more cucumber. You can really smell that ginger. Make sure you're catching everything here. A little bit of celery. Kale. See how dark green that kale is? It really comes out of there green. Hoping we're catching all the nutrients. This is what I mean by larger juicer. You can see how little bit of juice that actually makes. You almost feel like it's wasting the kale, but I do hope that the nutrients are coming out here. I know the fiber is getting lost, but it sure does look very beautiful. I'm going to cut down the lemon a bit more here. One of those through. I think it needs even more. Just want to make sure that we get the sweet stuff in there. All in whole. More apples, more ginger. Try to keep that from splattering like that just did. I'm not done yet. I am going to juice the rest of this, but I'm going to change out the glass so that I can get the full amount.
