Short YouTube how-to on assembling mason jar salads: start with dressing at the bottom, add protein (grilled chicken), beans (black beans) and seeds (pumpkin seeds), then vegetables (peppers, cucumbers, tomatoes, onions) and cheese, finish with greens (spinach, romaine). Refrigerate; stays good for next day or several days.
Mason jar salads. My new favorite lunch idea. The best part about this is that you can pretty much add whatever you want. You want to start with your dressing at the bottom. This is a homemade chipotle dressing. A couple spoonfuls or however much dressing you prefer, then you're going to add your protein. So I've got some grilled chicken here. Next I added some black beans for a little bit of extra fiber and then some pumpkin seeds. Once your protein is in, then you start in with your vegetables. That's going to be the middle of your jar. So we've got some peppers here, some cucumbers, some tomatoes, onions. And then of course, I also like a little bit of cheese on my salad as well. Once all of that is in, the top half of your jar is going to be your greens. So we've got chopped spinach and chopped romaine. Once everything is in, you're just going to pop the top on and stick it in the fridge and it is good to go for the next day or even a few days later.
