Pentadecanoic acid (C15) makes up about 1% of fatty acids in whole-fat dairy. Grass-fed cows produce milk with twice the C15 of corn-fed cows, and low-fat milk has half the C15 of whole-fat milk.

There's no pentadecanoic acid or C15 in dairy or fermented dairy or anything like that. Or is there?
There is. So there's C15 in dairy fat. And here's the important point, right? Which is exactly along the lines of where you opened this conversation, where if it is low fat, it has half as much C15. If it's non fat, it has no C15 in it. When we look at milk fat as a whole, There are over 400 different fatty acids in milk fat. Only 1% of all those fatty acids, even in whole fat dairy, is C. So it really is this trace essential nutrient. And then you'll love this part, which is that when cows are fed grass, they have twice as much C15 in their fat than cows that are fed corn.
