The Truth About Eating Meat | Peter Ballerstedt, PhD x Dave Asprey

In this segment of the interview, Peter Ballerstedt addresses the common environmental argument that ruminant livestock should be eliminated from the food system. He emphasizes that a sustainable food system cannot exist without livestock, especially ruminants, and urges a deeper look beyond the single issue of greenhouse‑gas emissions. Ballerstedt cites recent observations from a European grasslands congress where measured methane emissions from grazing cattle were lower than model expectations, highlighting a gap in scientific understanding. He explains the natural carbon cycle of ruminants: photosynthesis fixes CO₂ into plant carbohydrates, which are consumed by the animal; microbes break down the carbohydrates, releasing some carbon as methane (CH₄), which is then oxidized back to CO₂ within about a decade. This cycle contributes essential CO₂ for plant growth, underscoring the ecological role of ruminants.
