A speaker argues whole wheat damages health through lectins and phytic acid, which block mineral absorption and weaken the body. He challenges the fiber myth and explains why whole grains cause deficiencies despite their reputation as healthy.

Whole wheat and whole grains in particular. In addition to containing lectins that I wrote about 12 years ago in my first big diet book, they also contain phytic acid, which is a big thing that I'm writing about in Smarter, Not Harder. Phytic acid sucks minerals out of your body. It prevents you from having the minerals that you need in your bones and in your mitochondria, especially zinc. So if you eat a whole wheat diet, you are going to be mineral deficient. You will have weak bones and you'll have a weak metabolism. So what I recommend people do is if you're going to eat flour, don't eat American flour because it's routinely sprayed with glyphosate that causes harm. You'd have to eat European flour, where they don't do that. And then you would throw away the more harmful outer parts of the whole wheat and you would eat the inner part as a source of carbohydrate, which you don't need that much of. So what you would do is you would take a big juicy, grass fed grass finished ribeye, and you'd have a croissant with it made with real butter and okay, there you go. But not a whole wheat croissant because they're fetishizing fiber. You can get fiber without the downside of phytic acid, without the downside of lectins, without the downside, gluten without the downside of leaky gut that everyone gets from gluten. Would I eat whole wheat during a famine to stay alive? Hell yeah. Is it an essential food for humans? No, it is not. It is just delicious.
