Today I'm going to teach you how to use collard greens instead of tortillas for your wraps, burritos, and enchiladas. This is an excellent solution for those of you who have gluten or corn sensitivities, or if you're trying to keep starchy carbohydrates out of your diet, and it really is the ultimate naked wrap for your foods. So you need 5 things for your collard green wraps. collard greens, whatever you're going to put inside the wraps, your knife and cutting board, and your steamer. So step 1 is to take the thick stem out of the collard green. So we're just going to take your knife and go all the way down that seam on either side, cut it right out. So you see here that the leaf is still attached to the top. I didn't cut all the way through, and you'll see why in a second. So step 2 is to steam the collard greens. Now you don't want to oversteam it, so literally this is like 30 seconds, maximum a minute. You just want the leaf to just wilt. We've got one right here. We're going to cut the end part here. The reason why we didn't do that earlier is because we always want to make sure we're using the same So you don't want to use 2 sides to 2 different leaves. So you notice I just overlapped one leaf on top of the other. Now, I'm going to take some of whatever the filling is, and I've got a great recipe for this in Eat Naked. So what we're going to do, take the sides and fold them over. Okay? And take the bottom part and fold it over. And pull it around. Now notice I am tucking in here as I'm rolling it. I'm not just rolling it because I'm making it nice and tight. And we roll it up. There you go. Nice little wrap. Now what you can do if you want to make this present even more nicely is you can take a knife and just cut it straight down the middle. And look at that. Doesn't that look nice?
