In this YouTube short, Lindsey Bomgren, a 37âyearâold mother of three who runs a fullâtime online business, demonstrates how to assemble a highâprotein lunch in under five minutes while a meeting is about to start. She explains why she keeps kale in the fridge (it stays fresh longer than spinach) and quickly massages it with olive oil, lemon, and salt. She adds a preâcooked batch of quinoa for grain, fiber, and protein, tosses in cherry tomatoes for color, and uses cottage cheeseâthe only protein she has on handâas the main protein source. The dish is finished with everythingâbagel seasoning for extra flavor. Throughout, Lindsey shares candid commentary about her hectic schedule, the challenges of mealâprep during summer, and the reality of eating while on a call, offering practical, timeâsaving tips for busy parents.

Hi, I think we get this impression that everybody online just has like hours of time and I'm a busy mom who runs a full-time online business but also has 3 children and wants to get outside and play with them in summer and tries to cram all of my meetings in. And I somehow, it's already 12:30, I've been sitting at my desk starving for the last hour, but I really wanted to finish this task. Anyways, I have a meeting that starts in 5 minutes. So make lunch with me and I'm probably gonna be the unprofessional person who eats lunch on my phone call because this is life. Anyways, I am literally pulling kale. I always keep kale in my fridge because it stays fresh, unlike spinach and stuff that gets wilted. This has been in my fridge for over a week and really needs to get eaten, so I'm just ripping up some kale. I'm going to throw some olive oil on it. This is what I have, not gone grocery shopping yet. We're gonna throw some oil on here. And we're just gonna massage this kale really fast so it's not so tough. Best part about kale is that it stays good, so you could like massage a big bowl of kale with some oil, lemon, salt, and throw it in your fridge so you would just have to dump, but I didn't do that. Okay, next we're making this so stinking fast. I did, I did pre-prep one thing, and that is a big batch of quinoa. So I can add some grains, protein, and get grains, protein, fiber. Protein and produce, baby. Protein and produce. And I have no fresh protein. I don't have any chicken. I do love chicken, all those things. I don't have any available right now because it's summer and my meal prep game, it's not good. It's not good. Um, random cherry tomatoes. Also should probably cut these, but let's be honest, I don't have time. I'm looking at the timer. I've already been filming this for 2 minutes. That means I have 3 minutes to make this and eat it and get it on a call. All right. We're not going to slice our tomatoes. We're just going to add a little color. My protein is going to be cottage cheese because that's the only protein I currently have available in my fridge. So I'm going to dump that on here and then I'm going to finish it withâ this is not enough. I need more. Welcome to my manic life. This is the non-highlight reel. Okay, that's a lot, but I like to eat a big lunch. The Finisherâ oh my goodness, you ever find that when you're hurrying you make more of a mess than when you're not hurrying? I know everyone who's watching this is going to tell me I need to regulate my nervous system or something in that nature. Listen, I'm a 37-year-old full-time working mom who runs a business and is just trying to eat my protein and keep it together. So anyways, the Finisher Everything Bagel seasoning. Probably gonna leave all this out, go take my call, and then come back and put it away. Have a great day. Here's my lunch. Quick, easy, done.
