You cook white rice in. What was it?
Coconut oil.
Coconut oil. It reduces its calorie count by 70%, the way the coconut oil changes the structure of the rice grains. More of it pass through your gut, but you get the fiber and the carbs that are actually healthy for you.
And a lot of people don't know this, but when you eat those prebiotic fibers, which is what happens, you cook rice that way, your gut bacteria will turn it into saturated fats called butyric acid and propionic acid. So people say gorillas are so strong, gorillas have this giant gut that ferments the plants into fats that make gorillas look that way. We don't have guts that can do that, but we can with some prebiotic fiber, we can do some of that. And that's why you feel good when you get that. So sushi rice without sugar in it is actually better for you than hot rice.
