Construction d'un espace produit

In this lecture, the speaker presents a comprehensive workflow for sensory analysis of chocolate products using a multidimensional approach. Starting from a product‑descriptor matrix of adjusted means (accounting for judge and session effects), a principal component analysis (PCA) is performed to visualize both variables (descriptors) and individuals (products and judges). The first two axes capture 96 % of the variance, separating descriptors into two correlated groups (sweet‑vanilla‑milk‑caramel vs. cocoa‑astringency‑bitterness‑granular). Product positions are interpreted via their coordinates on these axes, highlighting chocolate 3 as an extreme, sweet‑milk profile, while others cluster differently. To assess whether observed differences are statistically significant, the method incorporates individual judge ratings as supplementary points, then generates many “virtual juries” through bootstrap resampling of judges (with replacement). For each virtual jury, product means are recomputed and projected, yielding a cloud of points for each product. From these clouds, 95 % confidence ellipses are constructed, allowing visual and formal testing (Hotelling’s T²) of product discrimination. The speaker also discusses practical aspects of the Sensominer/panelips function: data format, specification of product/judge columns, scaling versus centering, descriptor selection via ANOVA (using a relaxed 20 % significance threshold), handling of blocks, and the impact of panel size on ellipse size and test power. The overall message is that confidence ellipses and bootstrap juries are essential for rigorous interpretation of sensory maps, enabling decisions about product differentiation and required panel size.
