Profil idéal et segmentation de population

The presentation, delivered by two students from Agrocampus Ouest as part of a final‑year project in applied statistics, explains the "ideal‑profile" (profil idéal) methodology for determining the sensory characteristics of a product that best matches consumer expectations. After outlining the basic method—using consumer‑provided intensity ratings and self‑reported ideal intensities, projecting individual ideal profiles onto a PCA‑derived product space, and visualising the common ideal via either bootstrap‑based ellipses or density estimation—the speakers describe their experimental data set: 86 judges tasting nine chocolate‑dessert creams evaluated on 13 sensory descriptors. They analyse the overall sensory space, compare preference zones with ideal zones, and then extend the method to heterogeneous populations by segmenting judges (by age and sex). To make class‑specific ideal maps comparable, they adopt the density method (which yields a single optimum per class) and perform a global inertia‑based significance test using permutation simulations, followed by pairwise distance tests. Results show a statistically significant difference in ideal profiles across three age groups, but not between sexes. Consequently they propose two product variants: one for the 25‑40 age segment (low cocoa, intermediate texture) and a second shared by the <25 and >40 groups (high cocoa, intermediate texture), with marketing tailored to each segment. The presentation also mentions the implementation of the workflow in the R package idemap_consumer, built on Thierry Vorge’s work, and discusses possible reasons for non‑significant findings (small class sizes, overlapping dimensions).
