A short YouTube cooking/demo by Autumn Calabrese (21 Day Fix Extreme) demonstrating how to make cashew-and-rolled-oat hotcakes. The video lists ingredients, shows processing oats and cashews into batter, provides skillet-cooking cues (bubbles, press test) and suggests topping with sautéed mixed berries; two pancakes count as one serving. The host offers brief tips on batter consistency and timing and ends with a program call-to-action.

What's up everyone? Autumn here. And today we are talking 21 day fix extreme, who is excited to try it? One of my favorite things about 21 Day Fix Extreme is the new recipes that we have and this one is my favorite. It is rolled oats and cashew hotcakes. So let's talk about the ingredients. You have two cups of rolled oats, half a cup of raw cashews, one and a third cup water, one tablespoon of melted coconut oil, one egg and one teaspoon of vanilla extract. I'm gonna use coconut oil spray on the pan and it's one and three quarter cups of mixed berries to garnish it with. So let's get cooking. So the first thing you're gonna do is place the oats, the cashews and a dash of salt in a food processor or blender and I want you to pulse that until it's coarsely ground. Then you're gonna add in your water, your egg, your oil and the vanilla extract and pulse until it's well blended. Your batter will be thick, but if it's as thick as paste, I want you to add two to three additional tablespoons of water. Go ahead and heat a medium non stick skillet over medium heat. Spoon about a quarter cup of your batter onto the skillet for each pancake. So they're not supposed to be huge pancakes, they're a little bit smaller. Guess you could have two small or one big, however you like it. So as these start to cook, it's about a minute or two that you want to let them cook at first. You'll be able to tell when it's time to flip them because they'll start to bubble. So we're going to let them just cook for a minute here. This is one of my favorite recipes in the book. They're a little bit lower in carbs. They're delicious. My son loves these. I make them on Saturday mornings. We're starting to get there.
See, Gotta be careful when you flip that. You actually.
I'm impressing myself right now. Normally when I flip pancakes, you guys.
It'S not a really pretty round pancake, but.
Alright, so it's about 30 more seconds letting them cook and then we'll take them off and we will top them with the berries. So when you press on them and they're not oozing batter anymore, that's how you know that they're finished. So take all of these off. Two pancakes is one serving. Top them with your berries. I actually like to saute mine, so watch. This is so easy. Your thing's already sprayed down. You just do it fast.
It makes it a little more sweet and it makes the berries juicy so that you get a little extra.
Flavor with your pancakes. Don't leave them on there too long or they'll be like complete mush. Oh my God. Trying to take berries off with a spatula? Not the easiest thing.
So there it is. Cashew and rolled oat hotcakes with mixed berries on top. Digging in.
It's delicious. It's extreme. I hope you enjoy the program, but be sure to click the link below if you want any More information on 21 Day Fix Extreme. Check back often and I'll see you guys next time. Bye.
