Cauliflower Crust Pizza—Healthy Dinner Recipe | Autumn Fitness

A short YouTube cooking demo (Autumn Calabrese with guest Jessie Jane) showing how to make a cauliflower-crust pizza. The video lists specific ingredients, demonstrates processing cauliflower into a 'dough,' draining excess water, mixing cheeses/eggs and seasonings, pressing a thin crust, baking at 350°F for ~40–45 minutes, adding toppings, then returning to the oven 5 minutes to melt cheese.

Welcome back, you guys. We are here again with Jessie jane of lily shop.com and today we are making dinner. What are we making?
Cauliflower crust pizza.
Yum.
Yeah, it's really good. I think it like throws people off. But there's no bread in this recipe because the entire crust is actually made with cauliflower, which is fantastic. Isn't that cool? I love it. You can put all your toppings on there and still like have that pizza. It's all cauliflower. Even my little kids eat it, so that's great.
What do we need? Let's get started.
You're going to need one small to medium sized head of cauliflower, Salt and pepper, obviously garlic, a half a cup of mozzarella, quarter cup of parmesan, two eggs. If you wanted to opt out of the cheese, I would say use a third egg. Fresh mozzarella, some cherry tomatoes and some basil.
It's pizza. So you really can put anything you want on top of there. More veggies, mushrooms.
You can put meats, pepperonis, chicken, anything.
All right, so how do we make this crust?
You're gonna take your cauliflower and you're gonna cut it into florets right here. So wash it, cut it. You're gonna put this in a food processor. So cut them small. And we have half of it in here already. We don't over pack it. So I'm gonna grind this into a paste.
The more paste like it is, the more, you know, it resembles like a dough. Gotcha.
All right, you see this? It looks like mashed potatoes, so that's what you want. And we're gonna put it in cheese cloth and you can get cheesecloth at the market. And there's a lot of excess water in this. And so the reason we're doing this is to get out the water. So when you bake your crust, it actually gets crispy. So now it's actually like a baked potato. See? Nice how it's crumbly like that. We're gonna put it in this bowl.
Okay.
And we're going to add all of our ingredients so this cauliflower has flavor. We're going to add salt and pepper, oregano, Two eggs, gonna help keep it together. Half a cup of mozzarella. I have some parmesan I' bit in like a fourth of a cup. I think it just adds a little bit more flavor. Garlic, four cloves. You can even do more. I like garlic. Add a little bit of onion powder. That's about an eighth of a teaspoon. And some red pepper flakes. You don't have to do this if you don't like the heat. You really want to like feel like you're over seasoning because cauliflower really doesn't have any flavor. So this is just a regular pizza pan. You could also do a baking sheet. If you had a cheesecake pan, you could do that as well. All right, and we're going to press this down onto the pan and you want it to be pretty thin. The thicker you make it, the longer it will take to cook and the squishier it will be. All right.
Okay, so now what do we do?
Okay, so this is going to go into the oven at 350 degrees for about 45 minutes. So you want to check it because the thinner you make it, the faster it will cook. But if you get all the water out, it cooks, you know, 40 minutes. So 40 to 45 minutes and you're going to see it's going to get golden brown. Just like a real piece of crust. Crust.
I feel like my magic trick.
Ta da.
Fastest pizza you've ever seen.
That's right. Okay, so it took us about 40 minutes to cook it though.
It did.
And it looks amazing.
And it looks like a super thin pizza crust. Isn't that really cool? So we're using store bought pizza sauce. You can make your own. It is very simple. But what's fun about this is it's good for the kids. So like my daughters eat it, right. They're five and two and you can build your own. So when you do this, they could add half the pizza. Put pepperonis on it. Mozzarella. Mozzarella. Do you wanna get the basil?
Yeah. So you want me to be just look at you. Like for real fresh basil.
It's already rinsed, so just rip off some pieces. We're gonna put this back in the oven for about five minutes. Same temperature, 350 degrees just to melt the cheese, just like you would on a normal pizza.
It's ready. It smells amazing.
So at this point I would put a little bit of pepper, right? Some more fresh basil. Make it look pretty good.
How we make it look pre.
Alright, so that is it. That's our cauliflower pizza.
Pretty easy, right?
Very easy. I love how pretty it looks.
Yeah, it's like fancy but simple.
Simple.
You can still eat your pizza but have your vegetables too.
Best part about it. Love that. Alright guys, I'm hungry. We're gonna dig into this. Thank you for joining us. Be sure to check back next week.
