A short conversational cooking demo where Autumn Calabrese and guest Jessie Jane (of Lilyshop.com) prepare healthy breakfast burritos. Ingredients include egg whites (or whole eggs), spinach, sautéed bell peppers and onions, optional cheese, and low‑carb or whole‑wheat tortillas. Key steps: whisk eggs until bubbly, season lightly, cook over medium-low heat with olive oil spray while stirring for fluffiness, assemble with fillings and roll tightly in parchment, label and store in freezer in airtight Ziploc bags. Practical tips: 18 egg whites yield about 6–8 burritos (or ~2 whole eggs per burrito), wilted spinach is optional because microwave reheating will wilt it, avoid watery fillings (e.g., mushrooms) to prevent sogginess, and reheat frozen burritos ~30–60 seconds in the microwave (check center).

What's up, everyone? We are back in the kitchen, and I have one of my besties joining me today. This is Jessie Jane, creator of Lilyshop.com do it yourself. Expert and all around fantastic cook. So we are doing a little special this month. We are doing four different healthy recipes.
We are going to be making breakfast, lunch, dinner, and my favorite dessert, which.
We don't get to do very often in my household.
So this week, we're gonna start with a breakfast recipe. What are we making?
We're making healthy breakfast burritos.
So what we need for this are eggs, salt, pepper, and then whatever you want to put in your burrito. So we're doing spinach. We have bell peppers and onions that I've already sauteed. And then we have some cheese, if you wanted cheese. And then we have two different kinds of tortillas. I have a low carb version, and I have a wheat version. What's cool about these is you can make them all ahead of time and then store them in the freezer. And then every morning when you wake up, you pop it in the microwave in the par for literally, like, 60 seconds, and you have something that you can take on the go, and it's healthy. All right.
All right, let's get started.
Okay.
Egg whites. Yes.
Oh, my God.
We got one. This is why Jesse doesn't cook with me.
So we're doing 18 egg whites, which is actually gonna make six to eight burritos. If you're using whole eggs, just figure like, two eggs per burrito per burrito. Gotta wash your hands. I knew you were gonna do it.
I thought I saw. There is. There's shell in there. How do you know it was me?
Because you always get the eggshells in mother's day.
Literally.
Remember, we ate all those eggs, and I was, like, doing it, and there was, like, five eggs in there.
She doesn't cook with me for a reason.
This is how you get an eggshell out when you're with Autumn.
I did it on purpose, so you can.
So you actually take the regular shell, and it's attracted to the eggshell, and it'll get the eggshell out.
See, I don't want to splash. See? Okay, so what?
Yeah.
This gets me. Just do lunges.
You're doing no different than what I just did.
Yeah, you have to get it up like this. See? You need air in it. That's what makes it bubbly.
So we whisk the egg whites, whisk.
It until it's all bubbly, and then we're gonna add salt and pepper. Kosher salt. Go easy on salt, please. Pepper. Pepper.
Let's put them on the frying pan.
Let's go.
Let's go.
You're gonna put your pan over medium to low heat using olive oil spray. All right. Pour the eggs in. The biggest tips when you're cooking eggs is one, to whisk them really, really well so they're very bubbly because that makes them more fluffy. And then stir it pretty often so they don't stick.
Right.
If you put it on really low heat, you'll actually get, like, the really soft, buttery eggs. And you have to cook them really slow, like for half hour. I mean, it seems crazy, but that's how you get them really good.
Eggs are almost finished, so we're gonna pull them off of the heat, and we're gonna mix in our fun ingredients.
Ready? Which tortilla do you want? The low carb.
Sure.
I.
Actually, if it was me, I would use the Ezekiel sprouted grain, because those.
Are my favorite, but mine, too.
We'll go low carb, and you're going whole wheat.
All right, so you want to put some eggs right down the center.
I want a little more egg.
Yeah. Let's not get crazy. We only get two eggs per.
That's not even one.
Fine. Autumn, trust me.
I'm the portion control queen. I can tell you what one egg looks like in there.
I know. I heard you were doing some, like, container thing or something.
You know, I got this thing out.
It's like, 21 days. Here you go, kid.
I hate you. Here you go.
Thank ya. So we didn't, you know, wilt the spinach down, but what you do with these is we freeze them, and then in the morning when you microwave them, it all wilts down anyway, so it recoaks. You could also do some green onions, which would be great.
Bell peppers and onions together.
So good, Right? Sometimes I put mushrooms in. You gotta be careful with the mushrooms because they're a little bit watery. Yeah.
They can tend to make it soggy.
All right, so this is it. Then. You're gonna roll it up like a burrito. Parchment paper.
All right. I'm gonna roll mine up just like this.
Roll it up like this. Tight. And then you write on here. It's four. You know, so I would do this. Maybe you wanna autograph yours and give it away.
Such a wise cracker.
This one.
Aw.
Can you put it in the freezer at your house? So I have something all day to eat?
So you pack them all up like this. Put them in a Ziploc bag and make sure you have no air in there. And then you store them in the freezer because the more air then you get like little freezer y things on it. Are you mimicking me?
Yes.

Thank you for having me, Autumn.
Of course. Tune in next week to see what we're cooking up for lunch. I'm excited for that one. Thank you for joining us. Be sure to subscribe and we'll see you guys next time.
Bye.
When we take them out in the morning and microwave them, how long do you mix them?
You microwave them in the paper. It's about 30 seconds to 60 seconds, depending on your microwave. I put mine on high. Check the middle because the middle will.
