Attack on Titan's real power isn't the gore but the questions behind it: why violence happens, what pressures drive it, what it says about fear and oppression. The blood is just the hook for something darker.
Even when I think about the show now, and some people say, like, oh, it's super gory, it's, you know, violent, I think for me, the questions that come about in the story are so much more riveting that I'm not focused on the violence, even though the violence is a core topic of what is happening. For me, it's the why is the violence happening that actually should scare you more than the blood itself.
