Welcome to my channel Food Medicine and Lies, and today I'm going to make aloo chaat. We all love it, right? But what is different in this? We boiled these aloo yesterday. After 24 hours of keeping it in fridge, now I'm going to cut it. And why is that so important? These are organic potatoes, so I'm not peeling it off because I like it with the peel. When we boil and cool potatoes, what happens? Their fiber becomes starchy, and it is food for good microbiome, right? And that is why you would have noted that some of your dietitians do give you boiled aloo chaat as a special meal, right? And tells you that this is not going to make you gain weight, this is going to make you lose weight. And also potatoes are something which is very, very, very important in Indian cuisine, right? All vegetables, they become complete when we add potato. So if you really are a potato lover and you want to stay healthy, this is the way to have potatoes. One important thing, please use organic potatoes if you have to, because potatoes are a part of the dirty dozen list and they have the habit of storing pesticides in themselves, and therefore normal potatoes are a complete no if you are a health So now what I'm going to do is, this is my air fryer jar, I'm going to add some oregano on this, right? Yes, okay. Yeah, some chili flakes if you like it spicy. If you don't like it spicy, you can omit it. If you like black pepper, you can add black pepper. Your taste is very, very important, right? And then this is a mix of spices which I have, which has salt also in it, and therefore I'm not adding separate salt. Salt. But guys, if you don't have any such mixture, just add plain salt and black pepper and you'll be ready. And now I'm going to put it in my air fryer container. Yes, and I promise you, you will love it. Your kids will love it and This will become a regular thing in your kitchen if you've not been making it till now. And if you've been making it till now and you boil your potatoes and keep them— so the beauty, you know, of these potatoes is once you've boiled them and kept them in the fridge, you take them out, reheat them, but the quality of fiber is not gonna change, right? And therefore you can eat them in, you can make chaats out of it, and still you will have the benefit of good fiber for yourself. So see, this is how it's looking, and I'm going to put it in the air fryer. So this here, I'm going to set it at 180 degrees. 15 minutes and it's on. If you want to add a little oil, ghee, coconut oil on it, you can add it. I have not added it. I will add it when they come out of the air fryer.
