In this instructional video, Dr. Priti Nanda Sibal demonstrates how to prepare a simple yet flavorful fruit salad while emphasizing nutritional optimization. She selects a variety of fruits—banana, guava, apple, and strawberries—arranged separately on a plate to allow individual preference. She then adds sunflower, pumpkin, and chia seeds to counterbalance the high glycemic index of the fruits. Freshly roasted flaxseeds are prepared on the spot to preserve taste and nutrients, and are sprinkled over the salad. Dr. Sibal strongly recommends drizzling a small amount of healthy oil (flaxseed or olive) to increase dietary fat, lower the glycemic impact, and boost nutrient absorption from about 30‑40% to 60‑70%. The video concludes with a brief farewell.

So we are roasting some flaxseeds because if in salad we add freshly roasted flaxseeds, that actually tastes better. And also the nutritional value is not gone because we freshly roasted it and then we are going to eat it immediately. Welcome to our channel Food Medicine and Lives, and we are going to make a very, very simple dish today but very yummy, that is fruit salad. So you can take any fruits. What I have taken is 1 banana, I've cut it into very small pieces. And I'm going to put it in the center of my plate, right? I've taken guava, 2 guavas, and I'm adding them here. So I'm not mixing all the fruits so that, you know, if somebody doesn't like guava and you have guests at home, you can— the guest can choose whatever he likes. Then I've cut an apple and I'm adding that on the plate, my salad plate. Now I have some strawberries which I really love, right? And we're going to add those on the plate. You can also add kiwi, orange, mango, whatever you want to add, that's all right. But now what do we do? We add some sunflower seeds, we sprinkle them in between because the glycemic index of fruits is high, and if we add some seeds, it balances it out. Then I'm adding some pumpkin seeds. And some chia seeds too. Right, now once this is done, we'll roast flaxseeds. The flaxseeds are roasted now, and we are going to add these. You know, we're going to sprinkle it. This is not the end. Beautiful. My strong recommendation to everyone Everybody is— please oil, flaxseed oil, olive oil, something in your salad so that the fat increases, your glycemic index gets low, and the taste also increases. Also remember, when you add this oil, the absorption of food increases. So if you would have had this salad without this oil, you would have absorbed just 30-40%. With this oil, 60-70%. So no harm adding a little oil, balancing the glycemic index, and improving the absorption of the nutrients which we desperately need in today's world.
