In this instructional video, functional‑medicine doctor Dr. Preeti Nanda demonstrates how to prepare homemade kombucha, a fermented tea drink touted for gut health benefits. She walks through each stage: boiling water, steeping regular tea leaves, cooling the brew, dissolving sugar, adding a commercial kombucha starter culture (SCOBY), topping up with cold water, covering the jar with a muslin cloth, and allowing the mixture to ferment at room temperature for about seven days. She emphasizes hygiene (avoiding hand contact with the starter), the role of the starter kit’s beneficial bacteria, and the formation of a new “baby” SCOBY that can be reused for future batches. The video frames kombucha as a traditional Indian fermented beverage that has regained popularity in the West for its probiotic advantages.

Welcome to our channel Food Medicine and Life, and I am your functional medicine doctor, Dr. Preeti Nanda. Today we are going to make another fermented drink. Kombucha. Kombucha was very popular in Indian traditional foods, but somehow we lost it. And Western, they started using it for the betterment of their health. Let's start making it and taking the advantage of kombucha for our gut health. So what are we going to do? I have a pan on the stove. I have taken 400 ml of water in this cup. I'm going to add this water in the pan. This is the tea, normal tea leaves which we use in our house. So this is Red Label tea. You can use any tea which you have. 2 spoons of this tea, I am going to add the tea leaves in this water and let it boil. Now the tea leaves are boiling. It's hot. We are going to sieve it in a glass jug and then leave it to cool. So I've switched off the stove and I'm going to just strain it in this glass jug and then let it cool down. So now this tea water has cooled a little. We are going to add 50 grams of sugar in this so that it can dissolve in water properly. Right, till the water further cools down. So now the tea water is ready. You see, the sugar is completely dissolved in this. I am going to add it in this container. Great. Keep it here. Now this is the kombucha culture starter tea. I am going to open this packet. Please make sure that you don't touch this with your hands. If that is the case, you can actually use gloves, right? Just open it and pour it in the tea mixture. Wow, the starter kit has gone inside. It's full of good bacteria for you and your gut health. And now this is chilled cold water. I'm going to add this on top of this. You can actually fill this whole jar with water. I'm just going to add some more water to this. Add this and see that it becomes full. Yes, now we are going to cover it with this muslin cloth and put a safety band around this jar and keep it at normal temperature for few days till this gets ready. After 7 days, after 7 days you will have baby SCOBY there and you will be able to reuse that to make more kombucha.
