Connecting with the Environment in Italy with Dr. Christine Schaffner
20 Nov 2025 · 28 min
This is a location-recorded podcast conversation (May 30, 2024) between Jennifer Payeur (founder of Nature Provides) and Dr. Christine Schaffner describing a week-long practitioner trip in Italy. They detail hands-on plant harvesting in the Italian Alps, intentional maceration using intrinsic "dodecahedron" water from buds, the spagyric (alchemical) step of returning ash/oligo-elements to extracts, and manufacturing techniques (liposomes, nano-processing producing "quantum carbon dots" and nano-oxygen devices). The hosts emphasize the fusion of ancient alchemical methods with modern biochemical and nanotechnology approaches, cultural observations about food and community in Puglia, and plans for a documentary and clinical application of these plant stem-cell remedies.

Hi everyone. Welcome to the Spectrum of health podcast. I'm Dr. Christine Schoffner and.
And I'm Jennifer Payer and I'm part of the Wellness Sherpa podcast. So we are coming together to collaborate after a week long adventure in Italy.
Yeah. And we wanted to do a podcast together that's going to be on both of our channels and we are in Italy together on our last day and so we're not in our studios. So please apologize if you hear any dogs barking or birds chirping. But it will give you a sense of the amazing experience we're having in nature together. So I wanted Jennifer to share a little bit about her inspiration about this beautiful trip that we went on. And just to catch everybody up, Jen Payer is obviously a dear friend and she is the owner and founder of Nature Provides that really distributes in the North America these beautiful plant stem cells as well as essential oils. And I have been her medical director for a few years now. And so we came together to share these products and really deepen our understanding. I can't wait to share what I've learned and really excited to share and bring this back to the clinic. So Jen, so what, what inspired you to create this trip?
Yeah, so five years ago I started Nature Provides and I went to Italy. I came to Italy to see the whole process. I'm a trust but verify kind of person, practition. And I was so astounded by the intentionality in every step of the process. And for the last several years I've held this vision of bringing practitioners to Italy to experience what I experienced. And I think it brings it to life in a very different way. It's easy to put things on a piece of paper and see them in a 3D kind of way. But being here in Italy and experiencing it, it brings it to a whole new level of understanding, deepening wisdom and really connecting the ancient ways of doing spagyrics and things like that to modern technology like nanotechnology. And that's what we've experienced and bridged on this whole trip is the old ways and the new ways kind of coming together in a beautiful way.
And we started in northern Italy and we actually had this beautiful experience of beautiful picking the buds from the trees in the Italian Alps. And got to see like from the first step of the process how much intention and really beauty there was surrounding these plants. They're in their natural environment. The couple that picks them within the company that they pick for are so heart centered and they're very intentional not to pick the branches or over harvest, but they're really just really asking the plant what they can pick from it to really make this medicine. And so from the first step we are working with nature and not over harvesting or controlling or really setting it up. So it's not a sustainable process. So I really loved being in North Italy and seeing the difference in culture and really the beauty of that experience.
Yeah. And what's so wonderful about it is the plants are in their natural environment and they are away from pesticides, herbicides, heavy metals, anything being sprayed. And it's just a beautiful experience to see the pant the plants thrive and to be able to ask permission, harvest them and not overdo anything so that the plant can thrive in its natural environment.
Yeah. And we saw how the plants were taken care of and kind of basically the initial macerate was beginning. We understood that plant buds actually have this really beautiful cellular water. In the US we often call it structured water or the gel form of water or coherent water. I've learned another name from it from Dr. Canelo, the scientific advisor and really the brain behind this whole beautiful operation. And it's this dodecahedron water, this beautiful shape that water forms to impart this information for health and healing in the body. And then depending on the contents of that water in the plant, then there is an alcohol extract because the alcohol is needed to extract the constituents that come from the medicine from the plant buds. So they find out how much alcohol to add and then glycerin. So this alcohol glycerin, dodecahedron plant water starts to basically come together to start bringing these properties out of these plant buds.
Right. And one of the things that is unique about this process is water does not need to be added because this beautiful dodecahedron water is naturally in the plant buds in that beautiful new growth phase, undifferentiated phase. And as Dr. Christine said, they understand and test how much water is actually in each plant bud. And that's how they know how much alcohol and glycerin to add to the tincture.
Based on that, it's so intentional. And there's not extra plate material as well, it's just the plant buds. Other gemo therapy might just really honestly just from kind of lack of effort, take the whole Plant bud with the bark and add the bark or the stems, you know, that are not part of the medicine into the mixture, which can create other properties that take away or dilute by adding more than just the plant bud water to the extraction process. So. So there's a really potent part of this beginning of taking the essence and the constituents out of this plant medicine.
Yes. And the, the. When you take the bark, you actually get an abundance of tannins which can chelate the active principles out of the tincture, which we don't want. We want to keep all those beautiful constituents and healing properties in the extract that we're creating.
And then we traveled. We enjoyed the culture of northern Italy and the beauty of the Italian Alps and the fresh air and the beautiful food and the beautiful mountain views. And then we traveled on bus together, which was a lovely way to connect the group. And we stopped, since we were driving down from the north to the south of Italy, we stopped in the middle in this monastery that was surrounded by the Alpine mountains, which are these beautiful, lovely green, very green, luscious mountains. And we stayed in a monastery. And I have never stayed in a monastery. I do have Catholic roots in my blood. And it was a really beautiful experience to understand this other aspect of how these plant buds came to be through Dr. Joseph Canelo's work and his really, bridge of science and spirituality. And he had a connection to the monastery. And so we were in this beautiful room with this beautiful natural light flowing through stained glass, really learning about alchemy and spagyrics and the spirit of the medicine.
Yeah. And one of the beautiful things about the monasteries, it took 400 years to build, and it's been around longer than the US was discovered. So just a beautiful experience. And Dr. Canillo really rooted us in the alchemy of the plants and in how the natural elements in our world connect to the plants and how they create this nano dot of energy. So we talked a lot about physics and biology in a way that, you know, I've. I've experienced because I've heard him speak before, but every time he speaks, I learn something personally deeper in my soul about these plant buds. And it was wonderful to see practitioners like Dr. Christine really come to life with this energetic experience that was in the room when he was talking about the. The elements.
Yeah, it excited me so much. As many people in my audience know, I. I love the science and I love the biochemistry, but really where I think my purpose in this part of bringing this medicine forth is really to combine, you know, the really beautiful biochemistry with really the quantum physics aspect of healing. I really think we're in a time where that is not just a really nice thought, but it's a necessary, you know, potential that we all need to tap into to really move consciousness and health to this whole other dimension that we're all being part of and being called to create.
Yes.
Yeah. And then we, we had this whole experience in the monastery and there was so much wind in this valley that the monastery was in. And I feel like it shifted our energy and really cleared the way for what was next. And we travele traveled to the south and we were in an area of body, Bari. And that's in Puya.
Yeah, Puglia is the region. It's in the heel of Italy.
Yeah.
It looks like, it looks like.
Puglia, but it's Puglia. And so we started our adventure with this lovely meal. And the Italians know how to connect and eat together. And so we would have these three to four hour meals with many courses and the food, instantly I realized how people are not as sick in Italy as they are in America, because you can trust the food wherever you go. Yes, there's probably some, you know, things that are maybe not ideal here, but they don't have glyphosate in Italy. They don't have the culture that we have of just monocrop like agriculture and not tending to the soil. And, and you know, people live in community with agriculture. And the south is really known for the grapes and the olives and all of the agriculture and the bounty that's here with food. And so we've really experienced that with each meal. And even if we were eating not what we usually eat in America, we had probably, you know, many pieces of bread and many plates of pasta that we don't eat in America. But it was a different energy than it would have been. And we, we felt that. And that coming together in connection in each meal and slowing down and connecting with each other is something that I think is lost in America. And I'm guilty of that. My, you know, work days, I'll not eat lunch, I'll have 10 minutes for myself. And, you know, just a meal is not as part of the day as it is here.
Yeah. And I think continuing on the theme of the energy that we brought from the monastery, when we're eating in community, which is really what the Italians create, it is, it's nourishing and connecting. And, you know, I'm guilty too. I'm, you know, the quick. I got it. I've Got five minutes. I'm going to go eat quickly. And there's something that doesn't assimilate in our bodies in the structured water when we are, you know, quickly trying to feed ourselves and then rush off to the next thing. And it's just. It was just such a lovely experience to, you know, connect and have conversation and be in community while nourishing our bodies at the same time. And as Dr. Christine said, even if it's not something we normally eat, my body was able to assimilate the food much better here than I do at home. And I think it's all of it. It's the cleanliness of the food, it's the lack of chemicals and pollutants, but also that community and connection. And one of the things I'm taking back with me is a reminder of, okay, stop. Take time when I'm eating to really allow myself to absorb what I'm eating in my body and allow it to go through and just connect to it in a different way.
Yeah, no, I absolutely love that experience. And I'm thinking about all the ways to bring that back to my life. It's going to be a little process, but I'm committed. And then, you know, one of my favorite days was seeing the manufacturing process. And so we had this beautiful experience of seeing the plant buds in their natural environment, and then we saw the manufacturing environment. And in America, there is a trend where these beautiful products, maybe somebody started in their garage or could, you know, have the manufacturing in their house for a certain, you know, extent. But if they wanted to get it out to the public, they have to, you know, go to a manufacturer and then start making things. And there's a quality that lessons in that process when you start to scale. And in America, we're seeing these beautiful product lines. You know, in America, we have a culture. The. The product lines, you know, grow to a certain extent, and the owners can't really handle that business. And so they'll sell to private equity, and then they'll, you know, then lessen the quality of the ingredients to sell again to, like, a mega corporation like Nestle. And, you know, that is a model that, you know, we cannot change medicine if we continue to really just accept that to be the standard. I have a lot of compassion for the people who follow that path, but it's just time for a new way, right where you're. We're bringing in nature into our clinics and into our lives, and we can't allow, you know, multinational corporations to dictate how our health is going to really, you know, be dictated. So I was, you know, in my heart I've always been the manufacturing has to be part of the medicine and I've never found a manufacturer in my life who's done that. And I've had been in the products natural products industry for 14 years and it was just so beautiful. They have a lab, they test everything. Even though there's this quantum aspect and spirituality aspect to the plants, there is a very deep scientific aspect that they, you know, verify and they make a sure that there is this high quality imparted. And so these plant buds are, you know, macerated in this macerate. But do you want to talk a little bit about the spagyric aspect? Yeah.
So spagyric as an ancient alchemical process where once the maceration process has completed, they, they press whatever plant material is left and then they burn it and then they put the ash back into the product and they spiralize it, basically structuring it and making the active principles more bioavailable. And why matter? Because the spagyric process is adding oligo elements. It's adding the minerals back into the extract in a way that you wouldn't normally get. And so that's one of the beauties of Dr. Canillo is he's, he's a biochemist, he's a doctor, but he's got these ancient ways of, of creating and manufacturing that he brings into the product and it gives it more energetic. So it connects to the quantum in a different way. And Paracelsus is the one who discovered this spagyric process and it really does add energy and light to already a highly intentional light product that has a biologic and a energetic impact in the body.
Yeah. And there's. Yeah like every part of the plant is used and not wasted. And that was really beautiful. And then I have, you know, partnered with Jen. She really open heartedly allowed me to partner to bring this idea of bringing a liposomal plant stem cell to my patients in my community. And I learned that not only is there the addition of phosphatidylcholine to create a liposome, but there's this nanotechnology in all the products that creates these beautiful. It's basically where he puts the. Yeah. Puts the products through this kind of this technology, this manufacturing equipment that allows the particles to collide and break down into smaller particles that he calls quantum carbon dots which were like. Of course, you know, there's this aspect and what that means to me is that this material is in a very nano form, allowing it to traverse in the body and get into the cells and the spaces where the body needs healing. And throughout this process, you know, Jen and I have been working on this description together, but we really, we're working on it. But where we are right now, that whatever plant, stem cell, whatever, you know, form that you're working in, these are potent drainage remedies to help unblock the stagnation and congestion of the time we're in. And the especially North American body congested lymphatics and blood and tissues. And they have a biophotonic component. So there is a coherent light aspect of this living essence that is in the plant. It is vibrational. Everything in life is vibrational. And there is a definitely a vibrational element. It's informational. So there's an information that is being imparted, it's regenerative. There is the DNA and the RNA in these plant buds that actually can talk to our DNA and affect the epigenetic expression to either dim down disease or allow more translation of health in the body. And they also infuse ourselves with this dodecahedron water that only adds energy, only adds information, only adds more healing and more light. Yeah, this biophotonic aspect is more light. And so these are. And if you're in my community, you know, I love this word coherence. These are really, I couldn't have even dreamed up a better remedy than these that really add coherence and bridge the biophysics with the quantum and just one bottle, you know, that you can, you can take.
Yeah. The only thing that I would add to that is all of that is a level of consciousness. So what I've noticed personally in working with these plant buds is that my consciousness has shifted and that has helped me traverse the world that we're living in now. It's improved my health, it's improved my mindset, my outlook. It's affected every aspect of me on all levels, all dimensions. And that's not, you know, it's kind of a strange thing to say, but it really is the perfect medicine. It's the perfect medicine for our bodies to be able to come back into a homeostasis and to be able to have things come back online in our body, communicating in a perfect way for health.
Yeah, no, I love that. And when I had that awareness and I saw, you know, we were only together a short amount of time, but it felt, you know, outside of time and space between Monday through we're all departing today on a Sunday that either I was ingesting some of the plant stem cells along the way. Not everybody was. And just being in relationship with this medicine, everybody in that on the trip experienced a transformation. And I think that's, you know, why we, like Jen and I do this medicine. We're not here to just like, suppress symptoms and make somebody feel better. We're like, here to, you know, excavate, you know, what needs to be excavated from the body and allow this beautiful light and consciousness to connect to this, you know, time that we're in that we really are called, like, this is why we're here and working together.
Yeah. And to bring vitality back. Right. We are meant to be vital, thriving beings. And in the world we're living in, that's not happening. And so these plant beautiful plant remedies are bringing vitality back after this excavation process. And it's just so beautiful to see. And one other thing I want to mention about Dr. Canillo and his practices. When he knows something that he wants to create and there isn't a device out there to support his creation, he'll create it himself. So one of, one of the privileges I've had is he created a nano oxygen water machine. And I mean, it's those nano bubbles. You're getting nano oxygen into your body in a very quick way. And that's just one example. He had probably five or six different machines in his manufacturing facility where he said, oh, this didn't exist. So I had to create it so that he could support these alchemical processes, these ancient ways of practicing and creating. And, you know, I don't think there is another company in the world that is doing things the way he's doing them.
Yeah.
And I think it was beautiful. You, you've known based on what I've shared, but for you to experience it. Dr. Christine, I saw you come to life and I saw, I could see your brain going, oh, my gosh, what about this? So I could see the neurons wired, you know, firing and wiring in your brain of, wow. The potential and how it's important to get these out to the world.
Yeah, yeah. No, I was like a kid in the candy store, to say the least. And, you know, I think our communities can hear this. I want to share one aspect that really just like, like, you know, seal the deal. So we mentioned these, you know, quantum carbon dots and Dr. Canelo shows in a lab. They have a luminiferous quality. They, they light up, they glow. They have a biophotonic aspect, as we mentioned. And, you know, we were in the monastery and he was showing this beautiful slide that showed the glow. It wasn't a pic. It was just a picture, not a video. And, you know, Jen, you know, we're also filming a documentary. Jen has her camera crew here and is creating a documentary about this. And so there was a lot of video that happened. And we saw, you know, in the test tube and these videos and the still picture, the movement of light in this test tube. And to us, that was our experience, Take it or leave it. But we saw it with our own eyes, and that really, really, really allowed us to embody happening with this medicine.
Yes. I mean, yeah, I have goosebumps.
Yeah, yeah, yeah.
It was beautiful. It was absolutely beautiful.
Yeah. So we are so excited to share this knowledge with each of you. And, you know, I really hope that this inspires you and this resonates with you for you to want to learn more and maybe. Jen, do you want to plant a seed about your documentary? Do you want to share a little bit?
Sure. Don't have quite a name yet. It's getting there. But my vision is to bring these plant remedies out to the world, and divine intervention, divine allegiance, alliance, whatever you want to call it, all happened at the right time. And so we were able to bring our camera crew here. The documentary is a little bit about my experience, my life, but really about these amazing plant buds and the experience that, you know, different people have had in. In utilizing them, working with them, and this intentionality. You know, I'm a big believer that Hara and intention is what is what and where we manifest from. And there is horror in every step of this process. And I just want to add one more thing that we did that I think is important because this will be in the documentary as well. You'll get to experience it yourself in a beautiful way, is we went to a farm, and we actually got to see some of the alchemy in, you know, live and in person. We distilled some essential oil, and we got to see a California poppy bud. I have never seen that before. And we opened it, and it was. I mean, I don't know how to put it into words, but it was one of the most magical things I've ever seen personally, to see this California poppy bud, which California poppy helps calm the nervous system. It helps with the. The intuition, helps improve intuition. It helps you sleep, helps with insomnia. It helps with so many things, but to see that bud open up and come to life, and that will all be in this documentary, and I'm excited for you. To see it and to experience what we've experienced this week in such a beautiful way. And I'm so grateful to have Dr. Christine here. When we met, it was. Was part of this. Alchemy is the best way to describe it. And things have been easy and in the flow, and I'm grateful that you said yes to be the medical director. And I know that things were going to keep going from here. Now that you've had this beautiful personal experience, I know there's so much more to come.
Yeah, we really, you know, this again and wrapping this up, I feel the same way. I just feel like, you know, one thing, things are sticky and stuck in your life, and then when things without even, like, effort just happen. That has been my relationship with Jen and these plans. And, you know, I really, really, really believe that this is one of the catalysts and bringing more health, you know, more light, you know, more consciousness, you know, to healing. And I think that's what anybody who works with us. Us is really on their core wanting to experience. So we're excited. We're here for you. You know, please, you know, reach out to both of us if you want to learn more and work with these and feel these in your body. And Jen has a beautiful website and so many ways to interact with all of the plants as well as, you know, I practice and use these in my practice every day, so I'm going to be using them even more with a different. I believe in the observer effect. So once you know more, you observe more. And so I'm really, really. And thank you for being part of our communities and allowing us to evolve and share as our knowledge evolves that we hope yours does, too. So anything you want to share.
In closing, just thank you for being a partner, a friend, and for supporting and bringing this beautiful medicine out to the world.
Yeah, well, thank you so much. Coherence. Yes. Yes. Yeah, that's what we're about. So thank you for listening to both of our podcasts. This is the Spectrum of Health, and.
This is the Wellness Sherpa, and you'll.
Be seeing many more, you know, episodes from us. I. I promise. All right, well, take care. Okay, bye. Have a beautiful day.
Bye.
