Nicole Johnsey Burke shows how to chit seed potatoes before planting. Place them in a breathable container with space between each tuber, keep them in a cool dry spot for about a week, and small sprouts will appear around the eyes. Then they're ready to go in the ground.

It's officially potato planting season. You need to order your seed potatoes right now, but as soon as you get them in the mail, you don't want to plant them yet. First, you want to chit them. So see on this potato every little place where there is a potato eye? We want to give those eyes a little bit of time to start to grow before we bury them. Take the seed potatoes and place them in a little container like this one that's got a breathable bottom. Now I'm just going to lay out the potatoes, making sure they each have plenty of airspace around them. Then I'm going to put this in a dry, cool place that is not sunny. I'm going to let them sit for about a week or so, and then I'm going to get all this little growth right around the eyes of the potatoes. Then they're going to be ready to plant out. If you don't know when you're going to plant potatoes in your area, you need to grab my garden calendar.
