Nicole Johnsey Burke explains that 98% of US lettuce comes from just two regions and over 40% gets wasted. Growing your own lettuce at home takes minimal space and avoids the chemical treatments, shipping, and waste of commercial farming.

It's time for this to stop. This is how 98% of America's salad is currently grown in just 2 places: Salinas Valley, California, and Yuma Valley, Arizona. Here, it's farmed and packaged in plastic and then shipped across the United States. But more than 40% of all this lettuce gets dumped in the trash, either by the growers themselves, the grocery, or us. But lettuce is something all of us can grow with just a little space, some soil, and a few packages of seeds. From just a small area, you can harvest a month's worth of salad that's free of chemicals, full of nutrition and flavor, and doesn't end up in a landfill. If we all grew a little bit of our own salad, we could change the food industry together.
