Robert Lustig explains how obesogens and diet alter the body's cellular redox potential, disrupting mitochondrial function across organs. This shifts the liver toward glucose release, adipose tissue toward fat storage, the brain toward hunger, and the pancreas toward excess insulin secretion.

The mitochondria will not necessarily work the same way as before, because the proton gradient in the mitochondria has been affected. So you can change what's happening in terms of energy metabolism based on what's happening, based on the redox potential of the cell. That's the idea. So diet and obesogens change the redox potential. Redox potential in the liver can cause glucose release or uptake in the fat cell, can cause lipolysis or lipid synthesis in the brain can cause hunger or satiety in the pancreas can cause insulin secretion or not. And so those tend to actually work in concert. And there's data for each of these that these things work in concert. When the redox potential in any given organ show changes, the redox potential and the other organs change the same way. So they're all working in concert to either store or burn.
