Un ulei de măsline premium se recunoaște după câteva calități esențiale. 🫒☝🏻

In this short monologue, Mihail Pautov explains how serious producers of premium olive oil verify quality through laboratory analysis. He outlines the three key parameters to examine: acidity, peroxide index, and polyphenol content. Acidity, caused by triglyceride degradation, should be below 0.8 % for extra‑virgin oil and below 0.4 % for premium oil; the Manzanilla oil from Casa de Coaldo records an acidity of 0.18 %. The peroxide index measures oxidation; values must stay under 20 meq O₂/kg for extra‑virgin and under 10 meq O₂/kg for premium, with the same Manzanilla oil scoring 3.7. Finally, polyphenol concentration determines therapeutic claims: EU regulations allow the term “therapeutic” for oils exceeding 250 mg/L. Casa de Coaldo’s Manzanilla oil contains 898 mg of polyphenols per kilogram, the highest among listed premium table oils. Pautov uses these data to illustrate how to identify a truly premium olive oil.
