Donald Burns defines restaurant health as measurable net profit after paying the owner a fair salary, not busy tables or rising sales. Most owners confuse activity with health. True health means positive cash flow, adequate reserves, controlled debt, and the ability to not work every shift.

You know, 91% of restaurant operators say their business is healthy. But here's the thing, I don't believe them. Not because they're intentionally lying, because many owners don't know how to define a healthy restaurant. The dining room's busy, sales are increasing, payroll clears, vendors are getting paid, there's a little bit of money in the bank. So the owner assumes that everything must be fine. That's not a financial diagnosis. That's just, I mean, it's a feeling. Your restaurant's health is not an opinion. It's actually a number. And that number is net profit. Not revenue, not guest counts, not your average check, not the balance showing up in your bank account every day. I mean net profit. Because sales can increase while your margins actually start to collapse. A dining room can stay packed while cash disappears. A restaurant can have money in the bank while sitting on unpaid taxes, vendor balances, credit card debts, and deferred repairs. Activity is not health. Revenue is not health. Survival is definitely not health. A healthy restaurant consistently produces profit. It pays the owner properly. It maintains positive cash flow. It has reserves. It controls debts. It reinvests in its team and the equipment and does not require the owner to work every shift just to keep everything held together like glue. I mean, pull your last 12 months of financial statements, calculate Your true net profit after paying yourself. And here's the thing, pay yourself a fair market salary. Then examine your cash flow, your debt, your reserves. That is your restaurant's physical. And unlike your feelings, those numbers will not lie to protect your ego. So stop telling yourself your restaurant is healthy because the doors are still open. I mean, come on, prove it. All of your restaurant problems can be found just by looking in the mirror, because you are the problem. But here's also the good news. Also means you're the solution.
