Your Food Costs Are Out of Control? Here’s Why It’s YOUR Fault and How to Fix It!

A short instructional video by Donald Burns diagnosing why restaurant food costs spiral: three primary operational causes—waste, inconsistent portion control, and mismanaged prep—and prescribing concrete fixes (waste tracking/logs, standardized portions with tools, and organized prep with staff training). The creator also promotes a free 90-minute TRC Method Masterclass taught to over 2,800 independent restaurants.

Food costs are out of control. Well, here's why. It's your fault and how to fix it. Let me tell you a story about Lisa. Lisa ran a very, very busy restaurant, but couldn't understand why her food costs were sky high. She felt like she was bleeding money every single day. Can you relate? So what I did is I took a deep dive into her kitchen operations and I covered three major killers. Waste, portion control, and mismanaged prep. It was a disaster, and she was losing money faster than she could make it. I mean, have you ever cooked a big meal at home only to throw half of it away because you made way too much? Or tried to follow a recipe and ended up with portions that could feed an army? That was Lisa's kitchen. A chaotic mess of waste and inefficiency. Sound familiar? So there is this naive belief that says as long as the food is good, the costs will take care of themselves. Wake up. Great food does not mean squat if you're throwing half of it away or serving portions that could feed a small village. You have to control your kitchen or it will control your wallet. So here are three killers to food cost and how you need to fix them right away. Number one, waste. Ignoring waste is the stupidest thing in the world. Every scrap of food that you throw away is money down the drain. Drop track your waste. Religiously implement waste logs and regular audits to minimize what ends up in the trash. If it's not on the plate, it's coming out of your pocket. Number two, portion control over serving is a common, common thing in a restaurant. Inconsistent portions lead to inconsistent costs. Standardize your portion sizes and stick to them religiously. Hold your team accountable. Use portion control tools like scales and scoops to ensure every dish is exactly the same. Consistency is always the key. And number three, not managing your prep. Or when I say mismanaged prep. Mismanaged prep is the stupid thing you can do if your prep isn't organized. If you don't have a plan, you're setting yourself up for chaos. Plan your prep. Meticulously train your staff to follow the plan and ensure everything is prepped accurately and to standards. An organized kitchen is a profitable kitchen. If your food costs are out of control, it's because your kitchen is out of control. Waste portion control and prep management are non negotiables. Get your act together or watch your profits go up in smoke. So if you're ready to break free from your restaurant, ruining your life and running it into the ground, grab a seat at my free 90 minute TRC. Method Masterclass.
