Lucas Wilhelm Hedenbäck says whether you should eat vegetables depends on your body. Pick organic, local, in-season ones to avoid pesticides and glyphosate. Some people digest them fine; others struggle with anti-nutrients like phytic acid. His staples are raw carrots, sauerkraut, and arugula.

Should you eat vegetables? This is very, very individual because some people react good to vegetables, some people react bad or worse. You have to experiment with yourself. Generally, guidelines that I always recommend everyone is if we're picking vegetables, we should pick always organic, local, and also in season. Very, very important variables because the main problem with vegetables in the first place comes from being sprayed with pesticides, insecticides, glyphosate, depending on where you are in the world. I think that's the biggest problem. And then if your body is able to digest it, I don't see that there's bad thing. For example, I eat a lot of raw carrots, I eat sauerkraut a lot, and also arugula. I think those work fantastic for me, and I definitely see a benefit from having them in my diet. For some people, it's not a problem. For some people, if you have some digestive problems, it might be worth taking them out because it's always going to be a bit of anti-nutrients and phytic acid and things that can cause some problem in the vegetables. But if it works for you, I think it's perfectly fine. If it doesn't work, then cut it out.
