We Blew Our Budget at the Newest Restaurant at Wynn Las Vegas | Pisces

In this YouTube vlog, hosts Josh and Rachael Fillbrandt attend the grand opening of Pisces, the newly renovated seafood restaurant at the Wynn Las Vegas. They walk viewers through the venue’s striking décor—including bronze‑copper flooring that resembles fish scales and the Lake of Dreams light‑show that runs every 30 minutes—while noting the energetic atmosphere. The duo reviews the full menu, highlighting price ranges (chilled seafood $36‑$110, appetizers ~$30, soups/salads $25, a $1,000 seafood platter, whole fish $95‑$180, and a $155 paella for two). They sample a cucumber‑vodka “Conventional Wisdom” cocktail and a spicy margarita, then taste a series of dishes: crab cigars (egg‑roll‑style crab cakes), a piquillo pepper remoulade, a Mediterranean sea bass ceviche, beef‑cheek agnolotti with truffle‑beef sauce, crispy Brussels sprouts with pomegranate, a salt‑crusted loup de mer (Mediterranean sea bass) presented tableside with flame, and a $155 paella. For dessert they try a Spanish‑style cheesecake, a salted‑caramel ganache layer cake with sour‑cherry Greek‑yogurt soft‑serve, Dubai‑style chocolate Ferrero Rocher pieces, and warm baklava donut holes. Throughout they comment on taste, texture, and presentation, repeatedly praise the food and ambiance, and note that they overspent (seven drinks and multiple high‑priced dishes). The video concludes with a strong recommendation, labeling the meal as “top meal of 2025” and urging viewers to visit Pisces while acknowledging the high cost.
Chapters
Hey everybody, I'm Josh.
And I'm Rachael.
And we have never been to an opening night at a restaurant.
But we are tonight. We are checking out Pisces here at the Wynn on opening night. Let's go! Rachael is a bit of a lunatic because we did not even look at this and she was just like, waitress, tell me which one we should She was so energetic and so excited to have people in these chairs on opening night that I just fed off her energy.
It's true.
Like, that's what happened.
And we did put in the reservation to be on the front, or I said on the patio on the rail.
And we got pretty dang close.
I would say this is pretty good.
I would take this.
Yes.
It is much prettier than I remember it being when it was Lakeside. So this already so pretty.
I'll definitely get some more footage of the interior before we leave tonight. But we like the show. The first time we saw it, we didn't really like it, but now we really enjoy it.
Yeah, what is exciting for me is that you can feel a palpable energy. Like, it's palpable. It's really cool.
I like it. It seems exciting.
Thank you.
Oh, and a purse chair.
A purse chair.
You can't go wrong with a purse chair. All right, and here is the menu. As you can guess, Pisces, it is a seafood restaurant. Focus on seafood. Uh, you can see the chilled stuff is Around $36 to $110. Appetizers are in the $30 range, basically. Soups and salads in the $25 range. There is a giant seafood platter, $225 up to $1,000. There's a crudo.
Did you just say $1,000?
$1,000. That is what you get for $1,000 right there. A little bit of everything.
That's insane.
Uh, and then there's some caviar service. Over here you've got some whole fish in the $95 to $180. There's some steaks, there's some pasta, paella. Your sides are in the $20 range, and then a couple more entrees from $45 to $95. So it is pricey. It is beautiful.
I do think your drink is the conventional wisdom.
All right. So yeah, I said I wanted something with cucumber. Yeah. And Rachael said she likes tequila. Yours is pretty. I think they're both pretty.
I do too, but yours is very pretty.
So mine is called Conventional Wisdom. It is a cucumber vodka-based drink. It has a little cucumber soda and a bunch of other goodies. Rachael's is a spicy margarita, and look at—
And who doesn't want a spicy margarita?
Come on. Yeah, it is beautiful. I actually, I don't know why, I think it's super cool.
The glass is amazing.
Yes. All right, so I'm a middle-aged So I had to go to the bathroom, of course. And I just went inside and walked around. This place is amazing. It's gorgeous. Even the floor.
Yeah, this, this flooring is just impeccable.
The most pretty, like, bronze copper.
It almost reminds me of fish scales. Yes.
Yes. Um, yeah, the dining room is amazing. You don't— you probably don't need to be on the patio. It's that good. And then the bar area is beautiful. They've got some fresh fish, which they did say they fly in fresh fish from the Mediterranean Every day, so you know we ordered one.
Yeah, we gotta try that out.
Yes, check that out—a fancy restaurant. Oh, look at you! You're using a knife.
Well, yeah, to just peel it apart.
Yes, it looks like croissant, and she said it's like croissant mixed with sourdough. But a fancy restaurant with some free bread. I love free bread. Yes, we have not been seeing that all the time. That is no, that's a roasted red pepper, right? Yes, there's like a roasted red pepper, and then there's some eggplant caviar.
They called it that red. The pepper has a nice, uh, bite to it. It's not like spicy, but you can tell it's there. She's right, that bread is like a croissant and sourdough had a baby. It's chewy, but there's a flakiness to it. I love it, and it's served warm.
Nice. So there's your eggplant, there's your red pepper, and there's your bread. All right, apps are here. This is the crab cigar.
Yeah.
Looks like a phyllo dough or like an egg roll.
It does look like an egg roll.
I'm hoping that there's just a big old chunk of crab in that.
I love the presentation.
Right? And then this is a piquillo pepper remoulade. Yep. And then we end up with a ceviche. This is a Mediterranean sea bass.
This thing is beautiful.
It is beautiful. They do pour the sauce once they come to the table.
Yeah.
But that looks great.
It's so pretty.
Yeah, this is gonna be good. All right, Rachael is starting with the crab cigar.
Yes.
And you can see next to her, we did go to our second drink. It is a sangria, and it is a beautiful glass.
It's hot. It's like a crab cake egg roll. It's fantastic.
All right, so like—
This is the coolest thing ever.
Like, it's their take on a crab cake then, you think?
I, I really believe it. Like, it has the Texture of a fried crab cake with the inside that does not have any filler in it.
Right.
That remoulade is just to die for delicious, but inside is crab. It's like a crab cake egg roll.
I love that idea.
I love it. It's so good.
And check out this dish that this remoulade comes in. It's a crab.
So this one is one of them that our waitress recommended.
I'm just going to go ahead. It looked pretty.
We got a new show going on.
All right, before Sonny and Cher interrupted us there, um, which by the way, we had our reservation for 8:00 PM, so that's why we're going to get to see probably 3 to 4 different shows tonight. Yeah. Um, all right, back to the ceviche. This is delicious. There's a little bit of, uh, a little bit of chili in there. There's a little bit of avocado. There's a nice citrus to it.
I love the presentation.
Yeah, it's a beautiful presentation. I don't know what this is.
It's a spine of a fish.
I think it's cracker. Don't worry. But no, it's, it's a delicious, really fresh start Good, good way to begin the meal.
I was like, what do you think about the crab cigars?
So freaking good. Uh, yeah, it's like a— almost like a spring roll is more how the texture is than an egg roll, I think. And then there's just a bunch of crab in there, and the remoulade goes well. It really is like a crab cake fried.
This is a good start so far.
And that is a great Great beginner as well. Yeah, I love the start. If you're enjoying this video and looking for more Las Vegas restaurant reviews, be sure to hit that subscribe button. We have almost 200 restaurant reviews in Las Vegas alone.
Whoa, that is so cool!
I don't think it got to the fish.
All right, I'm gonna start out with this beef cheek agnolotti. It looks fantastic.
We love agnolotti, we love beef cheek.
There's a bite to that pasta. It's well done, not overdone, but cooked well. The thing that I can't Place my taste buds on is what that sauce is. It looks like a simple sauce. The beef cheek itself is very tender. I love this sauce. Like it eats very light for a beef cheek agnolotti. I was expecting it to be a lot heavier. All right, so you get a truffle beef sauce. That's that's why I couldn't place my taste buds to it, and it's very creamy, but it enhances that beef flavor immensely. We also got crispy Brussels sprouts. Brussels sprouts, because who doesn't love crispy Brussels sprouts?
As long as they're crispy.
And they are. We've had some that have been boiled and they're awful, but these are not. These are crispy. There's a nice— oh, there's pomegranates in there. Like, I just got a pop of pomegranate in my mouth. That was fantastic. Those are good Brussels sprouts.
All right. Is there any, like, flavor profile you get?
Not on the Brussels sprouts, no. No.
Okay. I don't. All right, so here's the big spend.
Yeah, this is the, this is the main dish.
Yes, it's a loup de mer. It's like a Mediterranean sea bass, they said. Um, it was salt-crusted, and then for some reason they light it on fire.
Yeah, what's that about?
I don't know, that's a little bit showy. I don't think that it changed anything because it definitely didn't get to the fish.
And Josh even said that as they're lighting it on fire, like, that didn't make it to the fish.
I was like, whoa.
But anyway, there is tableside presentation with that.
And now there is like a Mediterranean spice that they put on there, um, herbs and spices. I think that makes it.
Really?
Yeah, because there's been times where we've gotten like whole fish before and it's like, yeah, it's whole fish, it tastes like any other white fish, right?
This one is deboned as well, so that's nice.
Thank goodness. Yeah, but yeah, no, this is— it's really good. It's a very strong herbaceous— it's— I'm not, I'm not capturing all the flavors, but it's delicious. And I mean, it was the most expensive fish on the menu. Yeah, but we were also looking at the paella, which was $155. It's for 2 people.
But we're like, you know what, we're at a Mediterranean restaurant.
Yeah.
We gotta get some sea bass or some fish of some sort. It also comes with a little slaw that looks like it has olives and maybe mandarin oranges in there. It's hard to say. I, I'm excited to keep eating this one.
Yeah, it's really good. All right, dessert is here.
No, the menu is here. Dessert menu is here. Dessert is not here yet, but, but we are getting dessert.
Yeah, we are eyeing 2 of these, but you can see that there's a best cheesecake. Must be the big in thing because—
It must be.
Yeah, we've seen it at several places this trip.
Yeah, we have not had it yet, but we've seen it in many places.
But it's like a Spanish cheesecake. Um, then you got some salted caramel ganache layer cake, sour cherry compote on Greek yogurt soft serve.
That sounds delectable, and it comes with donuts.
Uh-huh. Dubai chocolate rocher, warm olive cake, This looks so good. We might have to get two.
I think we're gonna deal. Look at that thing. Yes. All right, desserts here.
We got two of them. This is some kind of Dubai chocolate Ferrero Rocher. Oh, this is like it reminds me of those Ferrero Rocher candies.
Yes.
Yeah, yeah. But with Dubai chocolate. And then this is starting to lean over. But this is our Greek.
You're gonna have to start biting.
Yeah, Greek yogurt. soft serve with some baklava donut holes.
Yeah, and then sour cherries.
Sour cherries in there. Yeah, we're gonna have to start with this one. So like we said, it's starting to tip, so let's go ahead and eat this.
I'm hopeful it's like so smooth.
Dumb smooth.
Dumb smooth. It looks so pretty.
All right, so I think the— we did go to Greece a few years ago, and Greek yogurt in Greece is different.
It is. You'll never eat regular yogurt again.
Yeah, no, you won't. Like, don't, don't get the stuff at the American stores. It's not the same. Like, this hits like that though, and it's so soft. It's so creamy.
You're gonna have to try one of those donuts too.
I love the sour cherries in there because it's not overly sweet. It just hits right, and sour cherry is one of our favorite flavors.
Yeah, for gelato.
All right, baklava donuts. Oh my God, they're so light, airy.
Wow, I was expecting to be a lot more dense.
It's sticky. It's like caramel. It's sticky. Good thing we have the yogurt to go with it because that would be really heavy, but It's going to pair really well with it. Good. Ferrero Rocher Dubai chocolates.
It's got some pistachio Dubai.
Oh God. Oh, you can see the filo dough at the bottom there.
Yeah, I'm going to turn this this way from where I did it.
Okay, that is beautiful.
So we were interrupted by yet another show out here on the Um, like Lake of Dreams?
Yeah, Lake of Dreams. It's every 30 minutes.
Yeah, I will tell you, the first few bites I had of this, it's like the, the only thing I can relate it to is like the best pistachio fried ice cream in the world, but it's not fried ice cream, but it has that candy-coated shell, it has pistachios, it's got enough. And then Josh found the wafer at the bottom of the dessert. It's the Dubai chocolate piece of this that I can't get enough of. I just want to keep eating it.
Right down here.
Oh, it's so delicious. And it's— again, it's a heavy dessert. It's rich.
It's gorgeous. It tastes so good.
Yeah.
Have you tried these yet?
I did. So that Greek yogurt, my God, like, I don't know how We're gonna get through both of these because they're delicious. Those little baklava donuts are impeccable, and they're served warm with that caramel sauce. So good. And I went for an espresso martini as well to finish the night.
And one more drink just for good measure. Yeah.
Oh yeah, that was a hell of an experience.
Yeah, okay, you know it's good when you end up ordering 7 drinks.
Yeah, I think we tried, uh, 75% of the cocktail menu.
And the reason why I say that is because like we actually wanted to stay. Yeah, uh, we talked about going in and just having another drink at the bar Because we enjoyed the atmosphere that much. Yeah, but the food was amazing. I will say, I think it's easily the top meal of the year for 2025 right now.
And I'm gonna tell you, you may hear this in a future video, that we have a top dessert of 2025.
This one beat it.
This one beat it hands down. The, um, Dubai chocolate rocher. Oh my God, I'm gonna dream about that. For days.
Yeah, I, I'm just gonna say, I, I think that everything hit.
Yeah, uh, so good.
Yeah.
You gotta, gotta check out Pisces here.
Yeah, we're speechless.
Yes.
It was a great time, great experience, great service. The venue is amazing.
It's beautiful. They redid that with some of the most intricate details. It was, it was absolutely beautiful.
And we, yes, we overspent. Please remember that those 7 drinks cost a lot of money. So if you want to go there and save a little bit of money, just drink, drink in your room or something.
Yeah.
