Welcome back to my kitchen. I'm Bridget, a functional medicine dietitian. And today I actually am so excited to share this rainbow frittata cup breakfast recipe that is amazing for balanced blood sugar. We tested it on a continuous glucose monitor and it only raises blood sugar four points. The reason that that is so key is because having a breakfast that keeps your blood sugar levels super stable is going to help to decrease cravings, increase your energy, and also improve your mood. So this recipe is a little sneak pe to the recipes that we're going to include in the upcoming Blood Sugar Resets. If you're interested in joining us for 10 days of low glycemic recipes that are tested on a continuous glucose monitor with grocery lists and overall meal planning, then we'd love for you to join us. You can click in the show notes to learn more about the program. Okay, so today we're going to be making this rainbow frittata. I'm going to start with cracking nine eggs. I got organic pasture raised eggs. It's always better to get higher quality eg possible. Do the best that you possibly can. Okay, we're gonna get cracking. Okay, we have our eggs. I'm gonna whisk them up with some salt and pepper and then add the ham. I got slow cooked, uncured ham from Applegate. I'm not the biggest fan of processed meats. I think that keeping your intake low is important, but when it's surrounded by a low intake and lots of other plant based ingredients, typically, you know, people do really well and it adds additional protein that's going to help to support your blood sugar. So high quality ham and trying to decrease processed meats is the name of the game. We're going to chop this and add it to the eggs. Okay, now I'm going to add the vegetables. So we're going to start with two cups of spinach. I have that measured out right here. Spinach is so rich in folate and also is high in vitamin C. So many nutrients in addition to the phytochemicals that you see from the green pigmentation. So we're going to add the spinach and then I'm going to chop up the onion, half of a cup of the onion and the bell peppers. I love all of these colors. We intentionally try to design recipes that have more colors in them because more colors equal more phytonutrients, which are amazing sources of energy for your cells that are so important for decreasing inflammation. On this channel. A huge goal of mine is to help you start to think about using food as medicine, but you also want to think about food as information for your cells. It provides your cells this information on a cellular level that helps you function to a greater level. So in this bowl, we have a ton of B vitamins that are super important for cellular energy and metabolic health. We have magnesium, we have vitamins A, E, K. We have tons of phytonutrients all in one breakfast bowl. Okay, so I've mixed in the vegetables, the ham, and the eggs. I'm gonna throw it into the muffin tin, and then we're gonna bake it at 350 degrees for 20 minutes, pop it out, and then we'll be good to go for our breakfast for several days this week. If you're interested in more recipes just like this, breakfast lunches, dinners that have been tested on a continuous glucose monitor and are combined into one meal plan, I would highly suggest joining us for the blood sugar reset that we launch twice per year. We're gonna pop this into the oven for 20 minutes and then have our final product. The egg cups are done cooking, so I'm gonna get them out of the oven. These look so amazing. I can't wait to add them to my breakfast. I'm gonna add the link to this recipe, to the show notes, and then we'll also include information for you to join us for the blood sugar reset.
