In this Tagalog-language cooking tutorial, the presenter walks through a detailed, step‑by‑step recipe for a Momofuku‑inspired naked birthday cake, designed especially for a leap‑year (February 29) birthday celebration. The video begins with a brief cultural note about celebrating birthdays that only occur every four years, then moves into the preparation of the cake layers, the crumb mixture, and the frosting. For each component the presenter lists exact ingredient amounts (including butter, vegetable shortening, sugars, eggs, buttermilk substitute, cake flour, baking powder, salt, sprinkles, coconut oil, vanilla, cream cheese, glucose, confectioner’s sugar, citric acid or calamansi juice, etc.), explains practical substitutions (e.g., vinegar‑milk for buttermilk, grapeseed oil for coconut oil), and provides mixing, baking (300 °F, 30‑35 min for layers, 15 min for crumbs), and cooling instructions. The frosting preparation includes a detailed emulsification process with butter, shortening, cream cheese, glucose, and powdered sugar, plus a pinch of baking powder and a drop of calamansi to balance sweetness. The assembly section describes the use of a 6‑inch cake ring and acetate sheet to build a naked cake, layering soaked cake, crumb mixture, and frosting in specific proportions, and finishing with generous sprinkles. The presenter emphasizes chilling the assembled cake in the freezer for at least 12 hours and recommends planning the cake a day ahead. Throughout, the tone is conversational and enthusiastic, with occasional personal anecdotes about friends’ birthdays and baby showers.

This birthday cake has several components, so let's start with the cake itself. We will need 1/4 cup or 55 grams of unsalted butter. Softened na sha. The recipe says room temperature, but actually, kapag softened butter, a little less than room temperature, so mas malami pa siya sa room temperature. Nabibili ito sa All About Baking, um, ito yun nabiliku for 73 kalahatin kilo. Tapos, inadagdag narin natin dito ang ating 1 1/4 cups na white sugar or 250 grams at 1/4 cup na light brown sugar or 50 grams. Ibite natin to at medium-high speed 2 to 3 minutes. There, scrape lang natin kayo sides before adding our next ingredient: 3 large eggs. So this is 150 grams. Tapos, beat olet sa medium-high speed 2 to 3 minutes. Scrape olet natin yung sides before adding other ingredients. So according to this recipe, it's just 1/2 cup of buttermilk, but usually when I don't have buttermilk, I always substitute. It's cheaper and easier to store. To substitute, just get 1 1/2 teaspoons of vinegar and add it to the 1/2 cup. Then pour the milk and fill up. Now, we need to mix it a little bit, so at low speed, mix it. 1/3 cup of cooking coconut oil. I know I have grapeseed oil, but I don't have it. 2 teaspoons of clear vanilla. You can see that it's curdled. Continue to beat on medium-high speed until 6 minutes. So, let's start with our dry ingredients. We have 2 cups of cake flour or 245 grams. We'll add 1½ teaspoons of baking powder and ¾ teaspoon of fine salt. So, these are the dry ingredients. So, once we've mixed this, about 45 to 60 seconds long, Scrape lang natin yung sides. And la lang din, minsan namin mix out kasi. So yep, I'm putting 1/4 cup or 50 grams of rainbow sprinkles. Sprinkles. So yeah, low speed. There, transfer that to our prepared pan. So basically, grease that with oil, then put non-stick paper. So very important, that's for the cake to not stick. Bake lang madito for 30 to 35 minutes. Heto na ang ating lutong cake. Ang ganun ng ganun, ya, sobrang colorful. So as you can see, pagpriness niyo ang edges, nagbabounce sha. So lumalaban sha lang ba, ha? Add 1 teaspoon of clear vanilla flavor. So this is the sprinkle on top of the cake, so that it will absorb moisture. For the birthday cake crumbs, we will need 1/2 cup or 100 grams of white sugar, 2 tablespoons or 25 grams of light brown sugar, 3/4 cup or 90 grams of cake flour, 1/2 teaspoon of baking powder, 1/2 teaspoon of fine salt, 2 tablespoons or 20 grams of rainbow sprinkles. We will mix it well combined. To this, we will add 1/4 cup of cooking coconut oil or spring, the brand that I'm using. We will add 1 tablespoon of clear vanilla. We will combine it and moisten you adding dry ingredients. Okay, so once that's moistened, set it on a sheet pan to bake. By the way, the baking temperature is 300°F. Perfect timing, it's only a year because I celebrate your birthday on February 29th. Every 4 years, so either earlier or later, happy, happy birthday. And incidentally, Bukas, meron dika m'ing triple celebration na akong mga friends. So yung dela one birthday na akong kaipika, and then yung isakong mga friend ay ano, malapit ng manganak, so baby shower pero actually mommy shower talaga ang gagawin namin. So bake nilang po eto for 15 minutes. 300°F na preheated oven. Here's our birthday cake crumbs. So it's already cooled down, but it's not completely cooled down yet. So right out of the oven, it's still hot, that's why it's still sticky. But since it's cooled down, it's already firm. So set aside that. While we prepare the other components of the cake, Again, so birthday cake frosting, for this we will need 1/2 cup or 115 grams of unsalted butter softened a little less than room temperature. Room temperature is 25 degrees Celsius, but 19 to 23 degrees Celsius. 1/4 cup or 50 grams of vegetable shortening, tapos 2 ounces or 55 grams na cream cheese. Soften din ito. Beat nyo lang eto at medium-high speed for 2 to 3 minutes. It's best to scrape yung sides habang nagbibit kayo ng ganito para sigurado kayo na lahat ay uniformly na bibit. Chem prefer this, ang perfect niyong ka partner. Flexible na spatula. So 3 minutes is up. Our mixture at low speed, adding 1 tablespoon or 25 grams of glucose. So what I would do, ay, in the microwave ko muna yung aken na lagyan ng glucose. For about 30 seconds. Tapos, yung pata transferan ko na la laan, ay, igrease ko na oil, chaka ako magta transfer no mas thinner na na glucose dun cell laan again para mas madali siyang mag-slide off. 1 tablespoon of vanilla flavor. The recommended recipe is clear vanilla, but I don't have clear vanilla, so I actually use 1/2 clear vanilla, 1/2 brown vanilla. So the show must go on, but it's equal amount, 1 tablespoon of vanilla flavor. So clear vanilla usually comes 30ml bottle, hindi sa pakyon for this recipe. Kaya kaylang andalawang boti nyo, nyung bilin ninyo. Pakatasnamaidagdag natin at low speed yung mga ibang ingredients. Itaskan natin sa medium-high speed for 2 to 3 minutes. So, dito, 1 1/4 cups or 200 grams na confectioner sugar or powdered sugar. So ibit mo na natin to sa low speed. I'm not sure kung ano ang purpose nato ng baking powder dito, pero I think it is to stabilize yung ating frosting. Pero kulapa citric acid, and I think expensive ang citric acid, so I am substituting etong calamansi juice. So mga 2 drops lang ng calamansi juice. I think this is to cut the sweetness. But made it good na 'mangayon, pedi 'nyo na ita as kulit sa medium-high speed ang inyong electric mixer, and beat it off for 3 minutes. Again, scrape dada 'nang sides. So special tools na kaylangan natin para sa ating pag-assemble ng birthday cake na 'eto, which is actually a naked cake. Kaylangan natin ang 6-inch cake ring at chakada lawang acetate. 'Eto yung makisilbing support kasi needed kasi matangkantong Hiya, so we're ready to assemble our birthday cake. One of the things that we're going to do is, using this 6-inch cake ring, cut 2 layers of cake. Make sure it's completely cooled. Upper layers, bottom layer. As you can see, yeah, Para ifilin yan, okay? Sprinkle, sprinkle lang generously, about 1/3 neto kasi Soak the other 2 layers. After cake soak, frosting, so 1/5. Cake crumbs, 1/3. So excited! After cake crumbs, frosting, so 1/5. Frosting. So definitely, cake, naked cake, for a design like this. Yunong i, i tabiño for the top layer tapos yung isa, yunong gawin na ting second layer. There you go. So it's an assembled birthday cake by Christina Tosi. I'm going to bake it in the Momofuku Milk Bar cake pan. Then I'll put it in the freezer for at least 12 hours. So plan your cake a day ahead.
