UNA FRITTATA DI AGRETTI DA URLO! 😍 #FrittataDiAgretti #BarbaDeiFrati #RicetteItaliane #RicetteFacili

In this short instructional video Orazio Vagnozzi demonstrates how to make a bright, herb‑flavoured frittata using agretti (also called barba dei frati). He first trims the lower reddish part of the greens, washes them, blanches them for two minutes, then shocks them in ice water to preserve colour. A finely chopped spring onion is sautéed briefly, after which the agretti are added and cooked a few minutes to release excess moisture, seasoned and set aside to cool. In a bowl he combines well‑drained ricotta, eggs, pecorino cheese, grated lemon zest, fresh mint, plenty of marjoram, and salt, then folds in the agretti mixture. The batter is poured into an oiled skillet, covered and cooked on the stovetop for about ten minutes; the surface remains slightly liquid. The pan is then transferred to a 220 °C oven and finished under the grill for a few minutes until set. The result is a fragrant, moist frittata, described as “squisita”.
